As we’ve been trying to figure out some health problems Jack and I have, we’ve tried to limit or eliminate certain goods. Lactose and fructose products to be exact. However, I’ve been most hesitant about eliminating gluten, even though in the back of my mind, I’ve always wondered if that would help.
However, I’ve been most hesitant about eliminating gluten, even though in the back of my mind, I’ve always wondered if that would help.
I think part of me is hesitant to do it, because if it does help, I’ll never get to have my beloved pasta and bread again. The other part of me is nervous, because it seems like a very hard lifestyle to have. And then another part feels like gluten free is just some fad that will soon pass, and I don’t want to look like I got all caught up in it for no reason.
All pretty selfish reasons, I know.
However, a friend of mine recently posted on Facebook a video from Dr. Oz called,Is Gluten SecretlyDestroyingYour Health. As I listened to it, and heard about all the symptoms of a gluten intolerance, I felt like they could have been interviewing me.
He has a simple test that you take during the video, and I said yes on just about every single one of the symptoms. I know that neither Jack, nor I, have celiac, but after watching this video, I realized that gluten intolerances aren’t just something that those who have celiac may experience.
Still, I’ve had a hard time committing to it. To take it out of Jack’s diet isn’t so
To take it out of Jack’s diet isn’t so hard, because he’ll just eat about anything I put in front of him. But for me, it’s been harder. I think the idea of coming up with meals that were totally gluten free intimidated me. I saw all these aisles at the store full of gluten free foods, recipes were full of the strangest sounding ingredients and flours, and I felt like I could never eat normal again if going
But for me, it’s been harder. I think the idea of coming up with meals that were totally gluten free intimidated me. I saw all these aisles at the store full of gluten free foods, recipes were full of the strangest sounding ingredients and flours, and I felt like I could never eat normal again if going gluten free did help. However, my sister, Diana, kept encouraging me all summer to at least try it out, and see if it helped. She suggested I just make a 30 day meal plan with gluten free dishes, so it didn’t seem so hard. So, I recently did that.
After being endlessly frustrated with doctors, I knew I had to at least try and change things on my own, and that meant trying to go gluten free for awhile. And, while I found plenty of recipes that had strange, expensive ingredients, I was more pleasantly surprised to find a lot of delicious recipes that used many ingredients we already know and love. As I compiled this list, I thought it would be nice to share it with all of you. I’ve read that it takes about 30 days to see if taking gluten out of your diet helps, so I thought others in my position, who aren’t sure if they should go gluten free, can use it to create a simple, 30 day meal plan for themselves. Or, hopefully this might help someone who is trying to figure out what to cook for someone who is gluten free!
Most of the recipes don’t require a lot of different ingredients (beyond the desserts, which obviously require wheat-free flours.) They can be made quickly, and sound pretty tasty. In this round-up, I have 30 main dish meals, and after that, a few side dishes, breakfasts, and side dishes. And, just as a side note, don’t freak out if I still post recipes that have gluten in them. I’m a work in progress, and keep changing my mind. But at least now, I have a meal plan to fall back on when I do decide to go that route! All of these recipes were chosen because I thought they sounded good.
