It is an easy recipe with minimal prep and ingredients. I remember when my niece Crystal asked me for the recipe for arroz con leche. All she could remember was that it required a lot of stirring! She was right! It does, and that’s ok. It’s all part of the process of learning. Tips~ Mom’s originally recipe simply included whole milk and granulated sugar. You most certainly can prepare it that way if you prefer. The sugar is to taste.

Arroz Con Leche (Rice Pudding)

This was a favorite of mine and my siblings on those cool days. Serve it warm or chilled.

Cook Time: 1 hour hour 5 minutes minutes

Total Time: 1 hour hour 15 minutes minutes

Servings: 8 Servings

Ingredients

Ingredients

  • 3 cups water
  • 1 full cup short grain rice
  • 2 large cinnamon sticks mexican canela if possible
  • pinch of salt
  • 12 ounce can evaporated milk
  • 14 ounce can sweetened condensed milk
  • 2 cups whole milk
  • *extra ground cinnamon for garnish

Instructions

  • In a nonstick saucepan combine the water cinnamon stick, rice and pinch of salt. Bring to a boil, reduce to a simmer and cover. Continue cooking until the liquid is absorbed, about 20 minutes.

  • At this time you can remove the cinnamon sticks or you can leave them in there.

  • Once the water is absorbed, stir in all of the milk products. Reduce the heat to medium/low.You don’t want it to boil. You will continue to cook and stir as needed until the mixture becomes thick and creamy. This process could take up to 40 minutes or more. Serve warm or chill and serve topped with whip cream as a special dessert! Garnish with fresh ground canela(cinnamon).

Notes

Variations: You can add some lime zest or orange zest to the rice as it cooks.

    Hey! Going to make this tonight, your recipe was the closest to how I remember my family making it! I got canela, wondering how much I should put in and if there are any other special instructions for using it?

      In the recipe I state two large sticks, so they are about 4 inches long. Instructions for the cinnamon sticks? Besides using the canel this way, I grind fresh cinnamon for my recipes. I break it into small pieces and use my coffee grinder. I only use it for spices, not coffee, lol! Cinnamon tea is tasty! A;so for preparing piloncillo syrup. The canela is added to some sauces and adobos as well.

    Hi! Have you ever tried making arroz con leche in an instant pot? My daughter and I love arroz con leche. It’s one of her favorite things that I make. Would you know how to convert this recipe so that I can make it in an instant pot? Tomorrow is her birthday and I am short on time, so I thought I might be able to cut down on time by using my new instant pot?? What do you think?

      I have never tried fat free milk, to be honest. I would think it would work, but it may not become as creamy as using whole milk.

      You can still use 2% Heather. Flavors the same, just slightly less creamy.

    My abuelita use to make this for us all the time. I carried on the tradition and make it for my kids now. I’m making arroz con leche tonight. I like to boil the canela sticks first and then add the rice. To me it gives it more of a cinnamon flavor. Thank you for sharing your recipes! I have tried many of them and they are delicious:)

      Hi Kim! You can use medium and even long grain rice for this recipe. The short grain has more starch which yields a more creamy recipe, but the others are tasty too!

      Sherry, the amount of cinnamon you add is up to you. I would just cook the arroz con leche without the cinnamon stick and then add cinnamon once you serve it.
