How to make the cauliflower parmesan
The key in this baked cauliflower parmesan recipe is to slice the head of cauliflower into thick pieces so it can hold a lot of sauce and cheese. Usually, a whole cauliflower head will yield you 3 or 4 steaks that hold pretty well together.
Once we cut thick cauliflower slices, we season them with salt, pepper, Italian seasoning and drizzle them with olive oil before roasting them first. This allows cauliflower to get a little browned with crispy edges.
Then we top cauliflower with marinara, mozzarella, and parmesan before broiling until bubbly.

- This cauliflower Parmesan is a naturally vegetarian main course. For a meatier main, use store-bought or homemade bolognese sauce instead of marinara.
- Feel free to use fresh mozzarella slices instead of shredded.
- Any melting cheese will work in this cauliflower parmesan instead of mozzarella. Experiment with Gruyère, 4-cheese blend, or even mix in some feta.

I liked this. I used Rao Arrabitta sauce, since it’s spicy I left off the pepper flakes. Will be making this again
