I'm not the only person in Casa de Cooker with superpowers.

The Big Sisterhas several superpowers. Shecan simultaneous tell you a joke that will have you falling down with laughter at the same time as leaving her school shoes in exactly the place that will have you falling down as you walk through the back door moments later.

Bearhands can sense that I'm in a foul mood andwith thedeft touch of a bomb disposal specialist knows just when to diffuse the situation. His other superpower is knowing exactly when the ads are over and flicking the channel back without missing a minute of the show.

The Little Sister's tummy has a couple of superpowers too. It alerts her the moment that you sit down to work and demands to be fed. Hertummy also knows the moment I'm cooking with my hands- rolling dough, stuffing chicken -then it produces something she needsmy help wiping. It's truly a gift!

When I offered him one of these broccoli, cauliflower and helium fritters, Bearhands begged me not to blog them butto offer the recipe to the highest bidder. Imagine all the goodness of broccoli, cauliflower and cheese in a fritter case. Yep. It's true. Broccoli is my superpower!

broccoli cauliflower and halloumi fritters

Ingredients:

½ cup plain flour
½ cup self raising flour
1 egg
1 cup milk
300g broccoli
300g cauliflower
250g halloumi
salt and pepper to season

Method:

In a large bowl combine the flours, egg and milk and beat until smooth. Allow to rest while you prepare the rest of the ingredients.

Steam the broccoli and cauliflower usingyour preferred method, then drain them of any excess liquid. I wash mine, breakitinto small florets and microwave. In a large bowl combine the flours, egg and milk and beat until smooth. Dice thehalloumi into little cubes and stir into the batter. Add the cauliflower and broccoli and stir until evenly distributed. Season with salt and pepper.

Spoon into hot, shallow oil and fry until a rich brown on both sides.
Drain on absorbent paper and serve with a wedge of lemon.

There's plenty of other superpowers I prefer to being the broccoli whisperer, but at my age I'll take what I can get.

    Oh these look right up my alley and I'm definitely going to be making them. I tell my kids I have the superpower of eyes in the back of my head and that I know everything they are up to - don't think they believe me though and I probably don't really want to know all they get up to either!
