This low carb recipe will one hundred percent satiate all your nacho cravings. If you season the cauliflower generously, then you are golden. I have this listed as an appetizer but for me, this is a main entree. Itā€™s got the beans for protein and it is beyond filling.

I used Morton + Bassett Taco Seasoning, but here are the ingredients listed on the bottle that you can throw together and use: ground cumin, paprika, chili powder, garlic powder, onion powder, dried oregano and pepper. Of course, do not forget to also salt the cauliflower too.

Make sure your cauliflower florets are dry prior to seasoning them and toss them with the oil. Dry equals crispy. You can also air fry these beautiful white trees or make a skillet cauliflower nachos. Just follow our recipe for 10 Minute Skillet Cauliflower and sub in these nachos ingredients as seasonings and toppings.

The Pickled Red Onions are the cherry on the sundae here. The toppings are pretty much all necessary, in my opinion. If you havenā€™t tried Kewpie Mayo, you donā€™t know what youā€™re missing. This sauce is the best part of the entire dish.

Ingredients

  • 1 cauliflower head
  • 3 tbs olive oil
  • 1 tbs taco seasoning*
  • salt to taste
  • 15 oz can black beans, drained + rinsed
  • 1 jalapeƱo, sliced
  • 1/2 cup shredded cheddar cheese
  • 1 tomato, diced
  • 1 avocado, diced
  • 1 scallion, chopped
  • 1/4 cup pickled red onions
  • fresh cilantro, chopped

Sauce:

Instructions

  • Preheat your oven to 420Ā° F. Line a baking sheet with parchment paper.

  • Chop your cauliflower in florets. Toss them with the taco seasoning, salt to taste and olive oil. Spread them out evenly on your baking sheet and roast for 25 minutes.

  • Sauce: Whisk together the 3 Sauce ingredients.

  • Remove them from the oven and push them together. Top with the beans, cheese and jalapeƱo slices. Pop back in the oven until cheese is melted. Remove the pan from the oven and top with avocado, tomatoes, scallions, cilantro, pickled red onions and sauce.

Notes

You can also air fry the cauliflower or cook it up in the skillet.

*Taco Seasonings: cumin, paprika, chili powder, dried oregano, garlic powder, onion powder, pepper.

    Omg!!! Sooo good.
    Second time I made it I didnā€™t have cauliflower so made with small cabbage wages. Guess what- it was still amazing.

    I used less Honey and a lot of sriracha in the Yum Yum.
    Great success with the fam!

      So this tasted really good, but Iā€™m confused on your statement of being low carb. Listed in your nutrition guide these have 51g of carbs, 21 of fiber, so that would be 30 net carbs! More carbs than allowed for complete days worth of carbs.

        I think most of the carbs come from the beans. I imagine if you want to make it lower carb but still high protein, you could replace the beans with ground turkey or beef.

    Made these healthy nachos and they are so delicious! Instead of using taco seasoning on cauliflower I used Red Hots wing sauce. So good!

      We love this recipe and make it almost weekly! We add mushrooms, black olives and sour cream but delete the yum yum sauce. So So good! Thanks for sharing!

    Delicious! My 4 year old helped with the prep (not with the jalapeƱos) and it was so much fun! These are delicious! I squeezed a lime over everything before eating and it added a nice zing. Will be making these again!

    My daughter made these for me last week and they were so good, that I made them the next day for my husband, who loved them!

    We left out the beans, and used taco seasoned, lean ground beef. We used the Cauliflower and beef for the base. Each person added toppings to theirs and we baked them on parchment paper on a baking sheet. Like individual nacho orders!

    Why was this so good??? I didnā€™t anticipate how delicious this would be. We used picked jalapeƱos instead of fresh, cause thatā€™s what we had, and we made a sauce with ranch, Cholula hot sauce, and chipotle, also because that is what was available. Definitely a better choice than regular nachos, but just as good!

    I made this and the result was great, so many tastes and consistencies. I used a mix of other sauces that I had around, as I didnā€™t have the ones in the recipe.
    Also, it was nice to have a recipe that uses a full cauliflower head, as usually recipes use a part of a cauliflower and then Iā€™m left wondering how to use the rest

    This is my new too-tired-to-cook weeknight dinner. Super easy and delicious! Even my pickiest child enjoyed it. I swapped out the sauce for a sriracha mayo I had on hand, and added a bit of cinnamon to the seasoning mixture. We had a little leftover and it was even better the next day warmed up in the microwave for lunch.
