Happy Monday, friends! It’s officially August, which means that it’s still definitely summer (at least in Texas) but we’re all starting to dream about fall! Ok, maybe just me. At the same time, I’m not totally ready to say goodbye to summer! I KNOW. So indecisive! Today we’re celebrating the last bit of summer with a Cherry Plum & Goat Cheese Summer Salad!
I’m not typically salad girl (more of a BRING ME ALL THE PIZZZZAAAA girl…), but I sure do love them in the summer! Especially when there’s fruit involved. And goat cheese. Lots of goat cheese. It makes the world a better place.
Another fun fact about me is that I LOVE trying new and strange produce. Not that Cherry Plums are a super weird fruit (are they even new??? They’re new to me!), but I was super excited to try them out! They’re DELISH. EPIC. BEAUTIFUL. Have you tried them? Do you love them?
So here’s what’s happening in this salad: Sweet and crips cherry plums, finely chopped spinach and arugula (my choice, not mandatory), savory grape tomatoes, and wholesome quinoa all balanced out by creamy goat cheese. I’m. In. Heaven.
This Cherry Plum & Goat Cheese Summer Salad is so good, you don’t even need dressing!
But if you want it, olive oil would pair wonderfully! Or this delicious Vegan Turmeric Ginger Dressing. This salad is also vegetarian, gluten-free, and only takes about 15 minutes to make. We busy girls don’t have time for a complicated recipe!

Cherry Plum & Goat Cheese Summer Salad

Ingredients
- 1/2 cup quinoa
- 4 cherry plums
- 2 cups arugula/spinach mix
- 2 Tbsp goat cheese
- 1 cup grape tomatoes
- 2 Tbsp pine nuts
Instructions
Cook the quinoa according to directions.
While the quinoa is cooking, slice the cherry plums and grape tomatoes into halves. Chop the lettuce (optional) and combine all of the ingredients.
Add the quinoa.
Serve and enjoy!

I just made a version of this delightful salad for supper ona hot Alabama evening and I’m hooked! I had bought some pluots/plumcots (plum apricot hybrid) as a challenge and searching for ways to use brought me to this recipe. Subbed in some cooked plain barley for quinoa and had sunflower kernels from another recipe. This was so refreshing, filling but not uncomfortable. I was pleasantly surprised by how the different tastes and textures played. Keeper!!Reply

Yum, summer is the best, isn’t it? The fact that you could eat this salad without dressing because everything is so fresh and flavorful. I love it!
