Woohoo…. it’s Friday!!!!!!! And I’m going to cram as much awesome Christmas stuff as I can into this one post. Have you guys finished your Christmas shopping yet? Only 12 more days! I haven’t completely finished, but I’ve made a huge dent. Thanks to all of the ice days, I was able to sit down and do tons of online shopping…. Amazon to the rescue! Let’s start this post off with what we all want this year, and that’s a cookie that just bursts with Christmasness {new word}. This is thatcookie! If you love peppermint, you have to make this cookie.

The holidays are a time for eating foods that you might not always indulge on and enjoying the tastes and flavors of the season. To enhance the deliciousness of this cookie, I used white flour, butter and regular sugar. Feel free to adapt this recipe and change out the ingredients to make these cookies a little on the healthier side. However I will warn you, you may loose the “Christmas cookie” texture and scrumptiousness! These are soft, chewy and absolutely fabulous…. I wouldn’t want you to mess that up! I adapted these from Santa’s Favorite Christmas Cookies.

Last year we had such a blast with the Christmas light scavenger hunt, that I decided to come up with my own printable list to share with you guys.

Peppermint Crunch Christmas Cookies

Yield: 45 cookies

A cookie bursting with Christmas flavor!

Ingredients

  • 1 cup butter, softened, 2 sticks
  • 3/4 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 teaspoon peppermint extract
  • 2-1/4 cups flour, all-purpose will work best
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 10 oz. bag peppermint crunch baking chips; such as Andes brand

Notes

Cookies freeze well, so you can do your holiday baking ahead of time. Let cool completely and store in an airtight container or zipper top bag.

Last year, the kids and I hopped in the car with our blankets, cocoa and cookies and went in search of the most beautiful lights we could find; including everything on our scavenger hunt list. We listened to Christmas music and had such a blast that I knew we had created a new family tradition.

    Those cookies look yummy. I am a huge peppermint fan, so I may have to put my baking apron on this weekend. Our family traditions seem to change each year as I have family all over the place, but my husband and I love to pack up a backpack with snacks, blankets, and “adult” hot cocoa, and ski out to one of the cabin shelters to sit by the fire. I love snow on Christmas! Once we have kids, that scavenger hunt looks like it would be a big success.

    That’s seriously an awesome Christmas tradition, and I may just end up trying to convince my family to go on a scavenger hunt this year. One of my favourite things is going to midnight mass on Christmas Eve. My family is European so we end up having our bigger celebration on Christmas Eve, with presents and dinner followed by a trip to church. Wouldn’t be Christmas without it.
