These are crispy on the outside, soft from the inside, and loaded with flavors. Marinated with dried herbs and spices, you can have tons of flavor and aroma, which makes them very irresistible.

I love to make these Crispy potato wedges when we have young people visit, and they find them so satisfying served with my Vegan Cheese sauce and my Ultimate Vegan Oatmeal Burger or just plain old ketchup.

You can spice them up using your favorite spices. I have used a blend of herbs and spices, which is just right.

Making homemade baked potato wedges is so better than the ones at the restaurant! They are healthier, and you get to contain the ingredients and flavor to taste; whether you want less salt or more spice, it is up to you.

I also love the fact that the potato wedges are baked with olive oil and not deep-fried, too, without compromising on flavor. It’s all about choosing the right and healthy ingredients to enjoy!

What potatoes work best for baked potato wedges?

You can find different potato varieties at your grocery store, but not all of them work well when you are making potato wedges. Some potatoes are high in moisture, and using them in baking means the output will turn soggy and mushy. So, for crispy potato wedges, it is best you choose potatoes that are low in moisture.

The best choice for making baked potato wedges include russet potatoes and Yukon Gold potatoes. These have a high starch and low moisture. As a result, these are crispy from the outside and soft from the inside. Plus, you can get these from almost everywhere.

Why should I leave the skin on when making baked potato wedges?

Well, the skin of potatoes turns out to be very crispy when you bake it, but it’s not the only reason you should keep its skin on. Potato skin has so many nutrients, minerals, and vitamins in it. The skin is rich in vitamin B6, Vitamin C, iron, calcium, zinc, copper, and fiber. So, why waste so many amazing nutrients when you can use them to gain benefit?

It’s all about the flavors you get into the potato wedges. And the best way to do so is by adding seasonings. Seasoning is the key to flavors. You can adjust the quantities according to your liking. Furthermore, you can add your favorite seasonings to enjoy the flavor. Here are the ingredients I have used and love to use when I make oven-baked potato wedges:

  • Olive oil: I have used olive oil for this recipe. It is loaded with healthy fats and is a perfect choice. You can also use avocados for this recipe. Olive oil makes these wedges crispy and helps in cooking them to perfection.
  • Garlic: Fresh garlic has a strong savory flavor which is very tasteful. You can also use garlic powder as well.
  • Nutritional Yeast Flakes: I love adding nutritional flakes to my vegan recipes. That’s because it has unique umami and cheesy flavor. Since vegan diets don’t include dairy cheese, people often miss the cheesy flavor. However, by using nutritional yeast, you can happily satisfy your cheese craving without worrying about dairy products. Isn’t it great?
  • Onion Powder: Onion powder has a slightly sweet but mostly savory and oniony flavor. It is a great ingredient when you want to add oniony flavor without using the actual ingredient itself.
  • Italian Seasoning: Italian seasoning is a blend of dried Italian herbs. You can easily find it in any grocery store. Italian seasoning includes herbs like thyme, rosemary, oregano, tarragon, sage, etc. it adds a rich aroma and a delicious flavor to the wedges.

Paprika is often a perfect ingredient for seasoning your vegetables, especially potatoes. Therefore, I love adding it to these crispy potato wedges. The heat of paprika goes well with its natural flavor of paprika.
  • Parsley: It has a slightly citrusy and herbaceous flavor. I prefer adding dried parsley to these wedges. However, you can use fresh parsley as well.
  • Cayenne Pepper: Cayenne pepper has more heat and spice than paprika. For those who absolutely love spicy food, they can use cayenne pepper as well. However, if you are not tolerant to heat, I recommend you skip this spice.
  • Salt: A little salt brightens things up. You can use table salt, sea salt, or pink Himalayan salt for this recipe. Whatever you have available. Add salt according to your taste.

What are nutritional yeast flakes?

Most people are not fully aware of nutritional yeast. Some don’t even try to give this ingredient a try because it’s yeast. Well, you might ignore nutritional yeast but let me tell you, it is an amazing ingredient. Nutritional yeast flakes are actually deactivated yeast. It comes in yellow powder or flakes, and the appearance is similar to cornmeal. It is known for its umami and cheesy and nutty flavor, and it is 100% vegan ingredient. It is also a very versatile ingredient and works well in almost every dish. I particularly love to use it in gravies, soups, vegan cheese sauces, popcorns, and of course, crispy potato wedges.

Nutritional yeast doesn’t just offer flavor, but it also has many health benefits. It is a rich source of protein, vitamins, and minerals. It is a particularly rich source of vitamin B12.

The thing about this ingredient is that it is found in bulk. So you can easily get it from the bulk sections of many health food stores. You can also find it on Amazon. It is quite a popular vegan ingredient and is easy to find.

How to cut potatoes for Oven Baked Potato wedge?

Cutting potatoes for crispy potato wedges is super easy. The key to even cooking is the size of the potatoes. Make sure you select potatoes that are equal in size. If you want the potato wedges to be large, choose large potatoes. I, however, always pick medium-sized potatoes. Here is how you have to cut the potatoes for wedges:

  • Start by washing the potatoes and scrubbing them. You can choose to peel them or keep the skin on. It is a personal choice.
  • Using a sharp knife, cut the potatoes in half length-wise. Keep your hand steady to avoid any accident or slipping.
  • Now place one half of the potato cut side down and cut it into half.
  • Cut the further half into half. Make sure you don’t cut the potatoes too thin.
  • Now place them either in a bowl or in a plastic zip-lock bag.

How To Make Oven Baked Potato Wedges?

Making crispy potato wedges is super easy. The maximum time you will need is for cooking which also isn’t a lot. Here are simple steps you have to follow to make delicious oven-baked potato wedges:

Step 1: Once you have washed and cut the potato wedges according to the method mentioned above, place them in a bowl or plastic zip-lock bag.

Step 2: Now add olive oil, crushed garlic, and all the dry seasonings, i.e., Nutritional Yeast Flakes, onion powder, parsley, Italian seasoning, paprika, cayenne, and salt.

Step 3: Toss to mix everything. Make sure every piece of potato is coated with spices.

Step 4: Now, prepare a baking sheet by lining it with parchment paper or greasing it with cooking spray. Place the potato wedges on it. Make sure they are not squeezed together on the tray. There should be some space for even cooking.

Step 5: Place the baking tray in a preheated oven and Bake until perfection. Serve hot.

  1. Cut potato wedges about the same size to ensure even baking.
  2. I usually add the seasoning and extra salt until you taste the seasoning; if you don’t season it generously, the wedges will taste bland after they are baked.
  3. Make sure you place the wedges on the prepared baking sheet in a single layer to ensure that they bake evenly.
  4. Turn fries halfway, depending on the size of your fries. You will need to keep an eye on them to prevent them from burning. You might need to cook for a longer time.

How Long Should I Bake Potato Wedges?

Well, baking the potato wedges depends on the size of the potatoes you have chosen. If you choose large potatoes, the wedges will take additional time to cook. Because I have used medium-sized potatoes, it takes about 45 minutes to get the beautiful golden brown color I love. Don’t forget to make it halfway into the cook for even color and cooking.

Can I bake potato wedges in an air fryer?

Absolutely. Although I have used olive oil in my recipe, which is very healthy, you can still opt for less oil. In such a case, you can easily cook these wedges in an air fryer. Place them in an air fryer basket and cook them at 400˚F for 30 to 30 minutes. Flip halfway into the cook for even cooking.

Do I need to soak potatoes in water before marinating and baking?

Well, it is not compulsory, but most people choose to soak potatoes in water before frying or baking them. And they have a very good reason for it. When you soak potatoes wedges in water, you are getting rid of extra starch. As a result, when you bake the potato wedges, they come out crispier than ever. Starch makes potatoes soggy.so, if you love extra crispy potato wedges, I recommend you soak them in water for 15 to 20 minutes. Drain them and use a kitchen towel to get rid of excess water. Marinade the potato wedges and bake.
