No need to track down sushi grade salmon. We are cubing, seasoning and cooking our salmon pieces in under 15 minutes and they will taste better than restaurant bought sushi bowls. My favorite part of this recipe is, of course, the sauce, which brings everything together.

Make sure you remove the skin from your salmon. I had the man behind the counter at the market do it for me. The gray part can remain, its the silver scales you want gone. Rinse and then pat the fish dry with a paper towel. Next you will cube it into small chunks, making sure not to cut them too small. This is because while turning them in the pan, they will fall apart if they’re too tiny. Also keep in mind that meat and fish both shrink when cooked.

The remaining ingredients are great for texture and color. The avocado is a must for the sushi bowl experience. I love the freshness and crunch of the carrot, scallions and the cucumber. I really recommend grabbing some Kewpie Mayo but regular mayonnaise definitely will work. If you like your sauce super spicy, add more Sriracha.

Ingredients

Rice:

Salmon:

  • 2 lbs salmon
  • salt, garlic powder, onion powder, chili powder, paprika + dried oregano to taste
  • 1/4 cup sesame oil (divided)

Spicy Mayo:

Assembly:

  • 1 large avocado, sliced
  • 1 large carrot, juliened
  • 3 persian cucumbers, sliced
  • 2 scallions, diced
  • 4 oz salmon caviar
  • 1 nori sheet, sliced thin strips
  • 1 tbs black sesame seeds

Instructions

Rice:

  • Cook your rice according to package instructions. In a small pot, warm your rice vinegar, sugar and salt until just about to boil and then remove from the burner. Transfer your COOKED rice to a platter, evenly pour the mixture on top and fluff with a fork.

Salmon:

  • Remove the skin from your salmon. Pat dry the fish with a paper towel. Cube the salmon into 1.5 inch chunks. Season the pieces with the seasonings – generously. Toss them to spread it all over the pieces.

  • In a large skillet, working in 2 batches, heat 2 tbs sesame oil on medium high. Add HALF the salmon and cook for 3-4 minutes per side, gently turning. Internal temperature of salmon should be no less than 145°F. Transfer cooked salmon to paper towel lined platter. Wipe down your pan clean and repeat with remaining oil and salmon.

Spicy Mayo:

  • Whisk all of the ingredients together until smooth.

Notes

You can use any rice you have on hand. You can also skip the vinegar mixture step. Dish will still be delicious.

You can sub in any cooking oil for the sesame oil.

      Hi Maria, Kewpie mayo is a Japanese mayonnaise commonly used by sushi chefs for sauces. It has a slightly creamier texture and really tastes yummy. You don’t need it though, regular mayo works fine in this recipe too!

    This was delicious! We used jasmine rice, no seasoning for the rice and just salt and pepper for the salmon. We ate it with whole pieces of seasoned nori and oven roasted asparagus. It’s going into our rotation!!

      I remember like 20 years ago when I could purchase whole king salmon flash frozen at Wal Mart, back when they did that within hours or minutes of fishing it on the boat. I haven’t had fresh tasting salmon since then. Anuway, the price was about $5-10 per whole salmon. It was enough for me to eat all week and as a treat for my dogs. That’s how much I love salmon; would eat it every day 2-3 times a day, but now at $25 a pound for the king salmon, it’s getting to be more of an occasional treat. Costco has the sakai salmon 3 lbs for $39.99. It’s only 7 pieces. But I will buy some to make this delicious sushi. To our health!!!

    I don’t normally rate recipes but this is so freaking good. Game changer for salmon. And you can ask your butcher to cut the skin off and slice it into pieces for you! Helpful for me anyways.

    Wow! Absolutely love this Recipe! My husband who loves Sushi rarely eats Salmon or Cod. This is game changing for me. I’ve made this recipe three times already within the last two weeks!     Oh my goodness. SO YUMMY. I love a good poke bowl but recently started Keto. Made this with lettuce instead of rice. Also, crispy salmon!!! Why haven’t I thought about that before?

    So delicious! I skipped the vinegar topping for the rice and just added cilantro to the rice. I added rice vinegar and honey to the cucumbers and added kimchi as a topping.The cubed salmon was SOO good! We hosted some friends and they raved about it!

    This was amazing! I love the spicy. My husband was a little sensitive to the spice. So if you are sensitive to spice I would suggest limiting the amount of sriracha.

    This recipe is sooooo good. We lightened it up a bit, air fry the salmon, halved the Mayo with plain Greek yogurt, halved the rice with cauliflower rice. We make this every few weeks, a household favorite.

    Haven’t used Nori sheet but I have it. Is this just a garnish?….how do I use this?

      Hi Mary Ann, glad it worked out so well for everyone!
      The nori paper is to be sliced into small shreds and used as a topping / garnish! you can leave it out if preferred. I also like to grab some Furikake at Trader Joe’s as a similar topping. Its got sesame seeds and small bits of seaweed. We love it!
