Ingredients
Sugar- Every great dessert has sugar in the recipe.
White corn syrup- This will be the added sweetener for the candies.
Water- You will need the water to be cold for this recipe.
Eggs- You will need only the egg whites for this recipe.
Vanilla extract- You can use pure vanilla for the best flavoring.
Optional Garnish- You can use things likePecans, whole or chopped,Raisins,Dried fruit orSprinkles
How to Make Divinity Candy Recipe
Use parchment paper to line baking sheets.
Prepare a medium heavy saucepan and add a candy thermometer to the pan.
Add the sugar, corn syrup, and water to the pan and heat on medium until the ingredients meet a hardball stage. The temperature will reach 250-260 degrees F.
While your ingredients are cooking, begin to beat the egg whites to form stiff peaks.
Once the sugar is at the right temperature, take away from the heat and gradually add to your egg whites, on high speed, whip continuously.
Pour in the vanilla and beat again until the candy starts to hold its shape. You will do this for about 10-15 minutes.
Before use, spray the cookie scoop, then arrange scoops of dough onto the baking sheets.
Add your desired garnish right after, I used pecans.
You will need to let the candy dry and harder for several hours or overnight for the best results.
Then, store the rest of the candy in an airtight container for up to 2 weeks.

Add a candy thermometer to a medium heavy saucepan
Heat sugar, corn syrup and water over medium heat until it reaches hard ball stage, 250-260 degrees F
While the syrup is cooking, beat egg whites until stiff peaks form
When the sugar reaches temperature, remove from heat and very slowly pour into the egg white, whipping on high speed constantly
Add vanilla and continue beating on high until candy holds it shape, about 10-15 minutes ** see notes
Spray a cookie dough scoop or 2 spoons with cooking spray, then drop scoops of candy onto prepared baking sheets
Immediately add whole pecan or other garnish, if using
Allow divinity to dry and harden for several hours or overnight
Store in airtight container for up to two weeks

Notes
The time will depend on your mixer. I found it best to beat on high speed for 5 minutes and then let the mixture and mixer rest for 2-3 minutes. Then repeat several times
It can also be stored in the refrigerator for up to 1 month. If you are storing divinity candy in the refrigerator, let it come to room temperature before cutting it into squares. Divinity candy can also be frozen for up to 3 months.
But if your divinity fails to harden, you can beat in two tablespoons of powdered sugar and allow the mixture to rest a few minutes; if the candy hardens too much, you can blend in hot water a tablespoon at a time until the perfect, fluffy consistency is reached.
Divinity is a confection made from egg whites, corn syrup, and sugar. It's similar to nougat, fudge, or marshmallow. Tip: replace the sugar with brown sugar to create "sea foam." Other ingredients can be used to give the candy other tastes, like chopped dried fruit and chopped nuts.
Drop mixture from buttered spoon onto waxed paper. Let stand at room temperature at least 12 hours, turning candies over once, until candies feel firm. Store in airtight container.
Most candies will keep 2 to 3 weeks (if not longer) if stored tightly covered in a cool, dry place or in the refrigerator. It's best to avoid storing different types of candy together in the same container because hard candies will become soft and sticky, and soft candies will dry out.
Corn Syrup – This is added to stop the sugar from crystalizing giving you a very smooth, chewy texture that's not grainy. Sugar – White granulated sugar is the best for this recipe, avoid brown sugar or it'll affect both the taste and look of the divinity.
High humidity hastens the breakdown of sugar as it cools. Once the candy has cooled to the point where it can no longer evaporate moisture, it can actually begin to reabsorb moisture. This produces a softer product than may be desirable.”
It's best to make divinity on a cool, dry day. If it's humid (over 50%) or rainy, the candy might end up with a more gooey, or grainy texture. If you're making candy on a hot or humid day, cook the candy a few degrees higher than the recipe specifies to overcome these undesired side effects.
Humidity equals wet, and wet equals candy that often won't set. Even in the cooler and less humid months, it can be a challenge to make old fashioned divinity - that being a divinity that is purely sugar, corn syrup, water, egg whites, chopped pecans, a little vanilla - and a goodly amount of elbow grease.
Divinity candy should be stored, airtight, for up to 5 days. It's best not to expose your candy to humidity. If you want to store your candy long-term, you can keep it in an airtight container in the freezer for up to a month.
In a meringue, the sugar syrup is cooked to about 240°F or until the sugar forms a soft, malleable ball when a spoonful is dropped in cold water. For divinity, the sugar is taken a bit further to 250°F (or the firm ball stage) where it can hold more structure.
So, the axiom: “You cannot make divinity when it's raining.” But not so today. With modern electric stand mixers, well-sealed homes against the weather, and central heat/air that help modify humidity, the candy-maker can no longer blame the weather for a bad batch of candy!

UPDATE: Found out you can select multiple items in the inventory, put them "in hand" then move them all at once, not bad once you get the hang of it. In the inventory screen there in actions menu will be a "send to Lady Vengeance" option. This sends anything to the storage chest.
