This delicious ground turkey stuffed peppers recipe is a healthy alternative to traditional stuffed peppers. Bonus, this is a gluten-free stuffed peppers recipe. It’s truly one of my favorite ground turkey recipes!

I love stuffed peppers. I’ve prided myself on having the best stuffed peppers recipe in the world, but this recipe by my mom is a close runner-up.

I love this ground turkey stuffed peppers recipe because it’s no-fuss and always a hit with my family.

I made these ground turkey stuffed peppers in a cast iron skillet, but honestly, you can put them any old sort of pan that works for you.

I’ve gotta admit that I love how they look coming out of the oven in that pretty cast iron skillet, though!

I think I’ve mentioned before that I don’t like my stuffed peppers swimming in red sauce.

This recipe has just the right amount of sauce inside, and you can certainly add extra to the skillet or pan before you pop it into the oven.

In an effort to reduce the amount of red meat we consume, we’ve been eating a lot of ground turkey.

Ground turkey recipes offer a great way to reduce some of the fat in the dish, and frankly, I think my kids must prefer the taste of ground turkey to ground beef because these always go down the hatch without any complaints.

That’s saying a lot when it comes to my kids.

This ground turkey stuffed peppers recipe is great because it’s so versatile.

If you would prefer ground beef, it’s an easy swap. You can also easily add more veggies to the mix or change the cheese.

You can lighten this recipe up even more by cutting back on the cheese or using a reduced fat cheese!

EASY GROUND TURKEY STUFFED PEPPERS!!! (4)

Yield: 6 large stuffed peppers

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

Healthy gluten-free turkey stuffed peppers are a wonderful addition to your dinner routine.

Ingredients

  • 6 large bell peppers, any color
  • 2 cups wild rice, cooked
  • 1 lb. 93% Lean ground turkey
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 16 oz. jar crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350 degrees. Prepare your rice and set aside. You will need two cups of cooked rice.
  2. Cut off the tops of the peppers remove the seeds, trim the bottoms to help them sit flat in the skillet and rinse thoroughly. In a large pan boil the peppers for 5 minutes, remove from water and turn upside down onto a paper towel to dry.
  3. In a large skillet add the olive oil, garlic and onion, saute until tender. Add the turkey and brown until thoroughly cooked.
  4. Add the crushed tomatoes, rice, Italian seasoning, salt, pepper and 1/2 cup of the shredded cheese and stir until blended.
  5. Fill the peppers evenly with the mixture, place in a lightly greased 10 inch cast iron skillet, or baking dish of your choice. Bake uncovered for 25 to 30 minutes. Remove and add the remaining cheese to the top of peppers and bake for an additional 5 minutes or until the cheese is melted.

    Made it with my 12 year old. I used white rice instead of mixed. It was good. I’d add corn and beans so i didn’t have as much rice. It was good and recommend

    I made a unstuffed version using cubanelle and pompano peppers straps that I microwaved for very a couple of minutes. I also used 1 cup quinoa with just a out a quarter cup of rice. I layered strips of peppers on bottom then put stuffing mixture followed by another layer of pepper straps on top. Covered and cooked 30 – 40 minutes. Uncovered and topped with sharp white cheddar and baked another 5 minutes. DELISH !!!

    Our local Walmart I my had small/medium sized peppers so I bought extra and ended up filling 9 peppers with this one recipe which was amazing

    I made these tonight and they were great!! After reading remarks I used riced califlower in place of the rice. My husband thought they needed some more flavor so I will try green chillis or maybe packet from the rice but use califlower. Thanks for all the ideas and I will be making these again and again.

    Thankful to have found this recipe ! have made it 3 X in the past month….each time doubled the filling recipe and just filled 6 more peppers a day or so later, so really have made it 6 times !! I use the Lundberg Wild Rice blend and it is fantastic. (sadly Costco has now made this product inactive so will have to find it elsewhere and pay more) And I just chopped up a can of whole tomatoes to leave little chunks :) I am looking for some variations on the recipe to change it up a wee bit. Saw the Mexican theme response and adding mushrooms !! great ideas.

    This recipe is definitely a winner! It’s was the perfect season to try it as there is an abundance of bell peppers all nice and red in our garden as well as herbs! I used my own fresh herbs instead of dried Italian seasoning because of the time of year ( basil, oregano, sage, thyme, rosemary, marjoram, parsley) plus garlic from our garden. I had a small handful of mini portabella mushrooms that I chopped and sautéed with the onion and garlic, and steamed the peppers for 3 minutes! We would definitely make this again!

    I have made this recipe at least 6 times now and is by far one of my favorite ground turkey recipes! It is so easy make and taste AMAZING! When I did Whole 30, I just subbed out the rice for cauliflower rice and took the cheese out. So much flavor, you can hardly tell.

        It would be exactly the same. Just substitute 2 cups of riced cauliflower instead of 2 cups of regular white rice. Could use really any kind of rice.

    So good!! I use 2 boxes of the Rice-A-Roni Wild Rice and add a little extra water so that when I’m ready to add it to the turkey&veggies, there’s a little bit of the broth from the rice flavor packet to soak with the ground turkey. I also add half a jalapeño for a little kick

    Made some changes that we really liked. One was just for convenience, we micro-waved the peppers instead of boiling them. We also eliminated the rice and added riced cauliflower that we found in the frozen section in the grocery store. Also, added sage, Worcestershire, and dash of cayenne pepper. Yummm!

    I love this recipe. I microwaved peppers 3-5 minuets instead of boiling to soften them. I added basil, oregano, onion powder, garlic powder, as desired (1 tsp each) as I don’t stock Italian seasoning. I drained the skillet after I poured in diced tomatoes as juice accumulated. Works out great. Ialso added 1/4 cup tomato sauce & chopped sautéed mushrooms to turkey mix. We love mushrooms. I pour the rest of the sauce over peppers & bottom of cast iron skillet & sprinkled mushrooms around skillet. Left over meat mixture my husband loves to just eat it. So good. Delicious!

    I really struggle with making anything and this recipe was soooo easy and soooo delicious. My husband who normally cooks and is not easily impressed also loved it. My 1 year And 2 year old who is very picky loved it. Def will be making it again. Easy meal and a hit with everyone!

    Just made tonight with added diced zucchini and Italian seasoned tomatoes. Also a guyere/Swiss mix cheese and fresh Italian parsley! Red Peppers, that I did not boil first…came out amazing!!! I know I changed a bit, but the lovely root of the recipe was spot on…thank you!

    Made this but instead of using Italian Seasoning, I used taco seasoning and added an 11 oz can of corn, and it came out so so yummy! The peppers were super tender and I liked the sauciness of the dish. Very good!
