Ingredients and Substitutions

  • Ground beef – I used 96% lean ground beef. Use any kind you wish here. You could also use ground turkey or chicken.
  • Vegetables – I used bell peppers, a yellow onion, and mushrooms.
  • Cheese – You can use any kind you’d like. I used shredded Colby Jack cheese.
  • Biscuits – One of my favorite parts! I used a 5-ct. container of Pillsbury Grands Homestyle Biscuits.
  • Tomato sauce – I highly recommend Muir Glen tomatoes. They’re the best!
  • Ketchup – I used G Hugh’s sugar-free ketchup.
  • Worcestershire sauce
  • Kitchen Essentials: garlic cloves, brown sugar, dry mustard and onion powder.

How To Make

  1. Preheat oven to 350°F. Spray a 8×11” or 9×13″ baking dish with cooking spray.
  2. Start by washing and preparing your veggies. I chopped mine using a food chopper.
  3. Next, heat a large skillet over medium heat. Add the ground beef and season with salt and pepper to taste. Cook until the meat is no longer pink, stirring frequently and breaking into smaller pieces as you go. Then, transfer the cooked beef to a large mixing bowl.
  4. Spray the same skillet with cooking spray. Add the diced pepper, onion, and mushrooms and cook on medium heat until veggies are tender, about 6-7 minutes. Then, transfer the veggies to the same large mixing bowl with the beef.
  5. Then, in a separate mixing bowl, add all the sloppy joe sauce ingredients. Whisk to combine. Pour sauce into the bowl with the beef and veggies and stir.
  6. Add sloppy joe mixture to the prepared baking dish. Sprinkle cheese on top.
  7. Cut each biscuit into four pieces and place evenly across the top.
  8. Lastly, bake for 25 minutes, or until the tops of biscuits are golden brown.

Cooking Tip!

I like the doughy taste of the the bottom of the biscuits, but if you wish to have them cooked completely, you can flip and bake another 10-15 minutes, do the same but broil for a minute, or just bake the biscuits separately and cut in quarters/top on the sloppy joe back at the end!

Ingredients

  • 1 lb. 96% lean ground beef
  • 1 medium yellow bell pepper (140g) diced
  • 1 yellow onion (170g) diced
  • 8 oz. bella mushrooms finely diced
  • 1/2 cup 2% shredded Colby jack cheese (56g) 56g
  • 1 10.2-oz. can GRANDS homestyle buttermilk biscuits (5 ct.)

Sloppy Joe Sauce:

  • 1 8-oz. can tomato sauce (226g) I recommend Muir Glen brand
  • 1/2 cup sugar-free ketchup (120g) I used G Hugh’s
  • 2 cloves garlic minced
  • 2 Tbsp Worcestershire sauce (30g)
  • 1 Tbsp brown sugar (12g)
  • 2 tsp dry mustard
  • 1 tsp onion powder

Instructions
