If you are allergic to eggs or short on time, the eggs are optional. I suggest using a keto-friendly egg substitute instead.

Traditionally, flan is made with sweetened condensed milk – it’s very high in sugar and carbs. In order to make this ket0-friendly, I knew I had to replace the sugar with a sugar-free sweetener. I discovered that a combination of different types of sweeteners is what it took to closely match the original light texture.

Butter unsalted
Swerve confectioners sugar substitute
Heavy whipping cream

Instructions:

1. Preheat the oven to 350 degrees, and fill a 9×13 baking dish with a few inches of water.

2. In a saucepan over medium heat on the stove, combine the water and Swerve brown sugar substitute. Whisk until the sugar is dissolved.

3. Add the butter to the saucepan, and continue to cook and whisk the mixture until it turns into a deep caramel color, but do not let it burn.

4. Separate the caramel sauce evenly in the bottom of 4 ramekins.

5. In a mixing bowl, beat together the heavy whipping cream, confectioners sugar substitute and the vanilla until combined.

6. Whisk together the eggs and egg yolks in another bowl, and fold into the whipping cream mixture until completely combined.

7. Pour the custard mixture evenly into the ramekins, and then place ramekins into the baking dish that has the water in it.
