What is the best steak for steak bites?

I made this recipe using top sirloin steak. Top sirloin is known for being one of the more tender cuts, especially when compared to the other sirloin cuts.

Other cuts of steak to consider,

  • Porterhouse (New York Strip Steak)
  • T-bone
  • Club Steaks
  • Tenderloin
  • Rib-eye
  • Stripsteak

When choosing your steak, look for one with lots of marbling and one at least 1-1 1/2 inches thick.

How to Make Garlic Butter Steak Bites

Start by adding a little olive oil to a large skillet set over high heat. Once the oil is hot (see recipe tip #2), add as many pieces of steak to the skillet as possible without crowding the pan (tip #3). Season generously with salt and black pepper.

Allow your steak to cook for about two minutes before stirring (tip #4), but don’t leave them for too long, either (tip #5). After stirring, allow them to cook for an additional 1-2 minutes.

If you have more steak to cook, remove the cooked steak from the skillet to a clean plate and set it aside. Repeat until all of the steak pieces have been cooked.

Reduce the heat to medium-low (tip #6) and melt about four tablespoons of butter in the pan (more if you like it extra buttery). Add the minced garlic and cook for about one minute. Return the steak back to the skillet and stir to coat in the garlic butter sauce. Continue to cook for 1-2 minutes, stirring often.

Garnish with fresh parsley and season with additional salt and black pepper, if needed.

Recipe Tips

  1. Bring the steak to room temperature. Simply remove the steak from the refrigerator about 30 minutes before cooking. This will result in more tender meat once it’s been cooked.
  2. Get your pan hot! The trick to making steak bites is to get your pan (stainless steel or cast iron skillet) super hot before adding anything to the skillet. This is because you want to give the steak a nice sear to help trap in those juices and create extra flavor.
  3. Don’t overcrowd your skillet. You will probably need to cook the steak bites in at least two batches as you want to add the meat in a single layer. Remember, we want a nice golden brown sear which can’t happen if they’re all piled on top of each other.
  4. Leave it alone. Let your steak hang out for a minute or two before you even think about stirring it all together. Again, this is for that nice, golden sear. If the meat sticks to the skillet a little, that’s ok. Scrape off the stuck-on parts when you add the butter. After all, all those little bits mean extra flavor.
  5. But, don’t ignore it either. Yes, you want to sear your steak for 1-2 minutes on each side, but you do not want to ignore it. Remember, your steak will continue to cook even after it is removed from the skillet, so if it’s a little medium-rare, that’s ok.
  6. Lower the heat. Reduce the heat of the skillet when you add the garlic and butter. I love toasted garlic, but burnt garlic? Not as much.

How to Serve

Steak bites pair well with just about anything. You can eat them straight from the pan with toothpicks or enjoy them with any of the following:

Try serving them with your favorite veggies like garlic bok choy, sauteed mushrooms, Brussels sprouts, roasted spaghetti squash, cauliflower, and butternut squash.

Soak up all that amazing leftover garlic butter sauce with creamy mashed potatoes, perfectly cooked white or brown rice, or a delicious baked sweet potato.

Ingredients

  • 1.5 pounds sirloin steak - cut into small cubes
  • 1 tablespoon olive oil
  • salt and black pepper - to season
  • 4 tablespoon salted butter
  • 5 cloves garlic - minced
  • ½ teaspoon fresh ground black pepper - plus more to taste
  • 2 tablespoon fresh parsley - finely chopped, to garnish

Instructions

  • Add the olive oil to a large skillet set over high heat. Once the pan is hot add the steak in a single layer, working in batches if necessary. Sprinkle generously with salt and black pepper to season.

  • Allow the steak to cook for at least 2 minutes before stirring. Once they have a nice sear, stir and continue to cook for an additional 1-2 minutes. Remove the steak from the pan and transfer it to a clean plate. Repeat until all of the steak bites have been cooked.

  • Reduce heat to medium-low and melt approximately four tablespoons of butter in the pan. Add theminced garlic to the butter; cook for approximately 1 minute. Return the steak back to the skillet. Stir to coat the steak bites in the garlic butter sauce and continue to cook for an additional minute or so.

  • Remove the pan from heat and sprinkle with chopped parsley, salt, and pepper, to taste. Enjoy!
