Happy November! Hopefully we’re all on the same page as to what that means…it’s time to think about (read: obsess over) Thanksgiving food! I’ve always loved sweet potatoes. At our Thanksgiving my mom always bakes them and I mash a little light butter into mine with my fork and I’m a happy camper. I know a lot of people add brown sugar or marshmallows and serve them as a sweet dish, but I’ve always preferred savory mix-ins. The naturally sweet flavor of the potatoes combines really well with tangy goat cheese, salty butter and earthy sage. The result is a creamy, rich, decadent side dish that you can serve with pride. Sweetening the pot is the news that sweet potatoes are low on the glycemic index, full of fiber and provide essential nutrients like vitamins A and C. Your Thanksgiving meal really can taste great and do your body good at the same time.

These Goat Cheese Mashed Sweet Potatoes make a great side dish for Thanksgiving or for any meaty main course!

Yield: 12 (1/2 cup) servings

Ingredients

  • 3 lbs sweet potatoes, peeled and cubed
  • ½ cup fat free half and half
  • 3 tablespoons light butter
  • 2 oz goat cheese
  • ½ teaspoon rubbed sage
  • Salt and pepper, to taste

Instructions

  • Place the cubed sweet potatoes in a large pot and add water to pot until potatoes are covered. Cover and bring to a boil. Sprinkle in a little salt and then reduce heat to medium-low. Cover and simmer for 10-12 minutes or until potatoes are tender. Drain out the water and return the potatoes to the pot or transfer them to a large bowl.

  • Combine the half and half and butter in a cup or bowl and microwave them together on high for one minute. Mash the mixture into the sweet potatoes until thoroughly combined and mashed. Add the goat cheese, sage, salt and pepper and stir in until well combined.

  • I usually add an extra step here and smooth the mashed potatoes out with an immersion blender or a hand mixer because I like my mashed potatoes really smooth, but it’s definitely not necessary.
