INGREDIENTS

1-16 oz bags of frozen green beans steamed
3 cups Mushroom Gravy
salt/ pepper to taste

Onion Topping:
1 large onion thinly sliced
2 tbsp powdered vegan egg replacer or tapioca flour (affiliate link)
2 tbsp water
½ cup of panko bread crumbs or gluten free bread crumbs
½ tsp garlic salt or to taste

INSTRUCTIONS

1). Preheat the oven or air fryer to 425.

2). Thinly slice onions and place them in a bowl making sure to separate the slices.

3). Sprinkle with the powdered egg replacer or tapioca flour and toss to coat. Then add the water and toss to coat.

4). Finally add bread crumbs and toss to coat well.

5). Pour the breaded onions along with all the bread crumbs onto a parchment lined baking sheet and bake for 20-25 minutes until crispy and brown. (You may lightly spray the onions with spray oil to get them to brown up nicely, this of course is optional.)

6). While the onions bake, steam your green beans until fork tender (or al dente if you prefer).

7). Then place green beans in a 9 x 13 pan, and pour 3 cups of the Mushroom Gravy over the beans. Make sure the gravy is hot.

8). Mix in the gravy and season with more salt and pepper if desired.

9). Once onions are done baking, spread them on top of the green beans along with all the loose crumbs and serve immediately.

This goes great with Garlic Mashed Potatoes and Cranberry Apple Rice Stuffed Acorn Squash.

My mom made this and the apple pie bites for Thanksgiving. Both were outstanding! Green Bean casserole was always my #1 favorite during the holiday. Thank you for this version, now I can have it again!!

Can’t wait to make this for TG!! Even though the recipe calls for frozen green beans if we already have fresh, is it fine to swap since they’ll be steamed anyways?

    Kiki,

I made this a couple of weeks ago and my gravy was super runny. I added a couple tbls of cornstarch to it and decided to bake in oven. It was still pretty runny, so I made up some mashed potatoes and served the veggies and mushroom gravy as a gravy. Did I do something wrong
