Ground beef stroganoff is classic comfort food, turned meal prep work week lunches!

Ground beef stroganoff was created when my husband asked for lunches that he could take to work and reheat that were more traditional to him than Quinoa Asparagus Salad and Chicken Shawarma Salads.

That is fair. I can do that!

Of course, I didn’t want to go all traditional and use steak and egg noodles, so I did my own slightly less traditional meal prep version.

Which Beef cuts can you use for Stroganoff?

This meal prep version uses ground beef. This is not typical for a beef stroganoff.

Beef stroganoff is typically made with:

  1. beef tenderloin
  2. steak tips
  3. sirloin and,
  4. boneless ribeye.

All of those will increase the cost of your beef stroganoff meal prep – but are totally fine to use.

Just know your simmer time may have to increase to prevent tough meat.

Why use ground beef for stroganoff?

I use ground beef for my meal prep stroganoff for a few reasons:

  • I always have ground beef on hand in my freezer.
  • It is cheaper than the other beef cuts.
  • No need to worry about tough meet.
  • Reheats well for meal prep – unlike steak cuts that can overcook on reheat and be tough.

What is the sauce in Beef Stroganoff?

It is a mushroom gravy!

No can of anything soup here! This easy gravy is made right in the pan with the meat. You also have options for thickening. You can use arrowroot powder (gluten free) or flour. Both work just fine.

I highly suggest using this (affiliate link)mushroom bouillon instead of beef broth too!

Can this stroganoff be frozen?

YES! Even with the sour cream, this can be frozen. I promise.

I like to freeze this in my 3 cup Pyrex glass containers (as shown in this images in this post). But I am also a fan of freezing this in my 2 cup souper cube trays!

Ingredients

  • 1 lb lean ground beef
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 3 cups sliced mushrooms
  • 1 tbs Dijon mustard
  • 1/2 tsp paprika
  • 2 tsp Worcestershire sauce
  • 3 tbs arrowroot powder OR flour
  • 1.5 cups beef broth
  • 1/2 cup sour cream OR plain Greek yogurt
  • salt and pepper to taste
  • 3 cups cooked basmati rice

Instructions

  • Get your rice started using the method of your choice. Cook according to the directions on the package. When it is cooked, set aside.

  • Meanwhile, in a large pan, on medium high heat, break up and brown the ground beef.

  • When the ground beef is about half cooked, add in the onions, garlic, and mushrooms. Continue to fry the mixture until the mushrooms have cooked down. Drain excess fat.

  • Add the Dijon mustard, Worcestershire, paprika, and arrowroot powder (or flour) to the pan. Mix to combine. Your mixture will not tighten up and feel dry. That is what it is suppose to be like!

  • Pour in the beef broth and combine. Now you have what appears to be a soup. That is also normal. Allow this to simmer on medium heat for about 10 minutes. It will reduce down.

  • After about 10 minutes, remove the pan from the heat. Allow to cool for 2-3 minutes.

  • Add in the sour cream. Do not add this while the stroganoff is boiling hot. To get the texture right, this needs to be combined off the heat.

  • Add salt and pepper to taste. The salt needed is highly dependent on the type of broth used. Some are high in sodium so be careful not to over salt.

  • Add 3/4 cup of rice to each container, and then divide the stroganoff mixture evenly between the 4 containers.

  • Allow to cool for 10 minutes. Secure the lids and move to the fridge.

  • Consume with in 4 days, or freeze for up to 4 months.

Notes

Nutrition information was calculated using arrowroot powder and sour cream. Greek yogurt can also be used instead of sour cream. Flour is the alternate to arrowroot powder.
