KETO BREAKFAST BAKE

Mornings can be a bit of a tough and chaotic time in everyone’s home. If you stop and think about everything that happens at that time, it can be downright tiring! From getting ready for school (or homeschool like us) or work to getting everyone dressed and ready and then making certain that you’re finding a way to get something healthy in everyone’s tummy…that’s a lot to handle at once!

This is why I love this low carb breakfast bake so much. First, it keeps us on track with our healthy lifestyle while filling our bodies with great fuel to keep us satisfied. I can make this ahead of time the night before and pop it in the oven to bake in the morning so that it is ready when my hubby and kids come downstairs for breakfast.

This Keto Breakfast Bake is one of my new breakfast favorites. Whenever I can plan and get a bit of a “jump-start” on my day, I’m in 100%. Plus, it’s nice to start the day with a low carb option that is only one carb per serving.

Ingredients Needed for Keto Breakfast Casserole

You seriously won’t believe how simple this low carb breakfast bake is to make. It comes together so quickly. Create and bake whenever you want! (or can)

  • Ham: Ham not only packs this low carb keto breakfast casserole with flavor, but it also adds necessary fats and proteins that are essential for the keto diet. I prefer Black Forest or smoked ham from the deli.
  • Eggs:Eggs are the core ingredient in this breakfast bake and the binding agent which holds everything together.
  • Cheese: Can you even make a casserole without cheese? I don’t think so. Cheese adds fat and flavor.
  • Butter: Salted or unsalted butter ups your fat count for the day and is used for sautéing the vegetables and preventing the casserole from sticking to the dish.
  • Heavy Whipping Cream: Make sure to purchase full-fat whipping cream to reap the benefits. It’s loaded with good fats, which help create a good consistency for the keto breakfast casserole.

It’s smart to utilize any extra time at night and meal-plan breakfast for the next few days with ease. The idea for this keto breakfast casserole came about when I realized I had an entire pound of deli ham that we had forgotten to eat. Since I don’t like to waste food, my wheels immediately began turning for a quick and delicious keto-friendly breakfast casserole.

STEPS FOR MAKING KETO BREAKFAST CASSEROLE WITH HAM, EGGS, AND CHEESE

Step 1: I used either smoked or Black Forest ham from the deli. Then, I sliced it along with 1/2 of a bell pepper and fried them both in butter. Brown them just until they have softened.

Step 2: Combine the eggs, heavy whipping cream, salt, and pepper in a bowl and whisk them until they are mixed well. Then pour the egg mixture and sprinkle the cheese on top. I gave the ingredients a little stir to make sure that the ham is covered.

Step 3: Bake the keto breakfast casserole in a 350-degree oven for 20 to 23 minutes. This keto breakfast recipe makes a generous portion per serving. Depending on the size of your family, this keto breakfast casserole may last for several days. And if there is more than you feel that you can consume, consider freezing n portions for later use!

Can this Breakfast Casserole be made ahead?

Yes, you can assemble this casserole then put it in the fridge to bake within 48 hours. You can also assemble then freeze to bake later. Make sure if you freeze it to wrap with saran wrap first, then aluminum foil. I prefer to use disposable aluminum pans for make-ahead freezer meals.

How to Store Keto Breakfast Bake

This recipe can be stored in the fridge in an airtight container for 3-5 days. To freeze, I divide into individual servings then wrap each one in saran wrap. Once they are wrapped, I put them in a freezer-safe container and freeze up to 3 months. The individual servings can be taken out and heated in the microwave for a quick and easy delicious breakfast. You could also freeze the entire casserole.

Tips and Hints

Tip 1: This keto breakfast casserole only takes about half an hour to make from start to finish. But if you need to, you can put it in the fridge overnight, so it’s ready to toss in the oven in the morning. If there is any left, it freezes well.

Tip 2: You can use other cheeses besides cheddar. You may prefer to mix it half and half with cheddar and mozzarella depending on your taste preferences. Or, you could bring a little spice with Pepper Jack Cheese.

Tip 3: You could also change it up and customize to your personal preferences. You could easily add bacon or sausage or substitute either of them for the ham.

Tip 4: Throw in a little diced onion, spinach, and/or mushrooms. You may want to substitute jalapeno peppers for the bell peppers to add a little spice.

  • Preheat oven to 350 degrees.

  • In a skillet, saute green peppers and chopped deli ham until the peppers begin to soften, and the ham is nice and browned.

  • Grease a 9 X 13 casserole dish.

  • Place the ham and peppers in the casserole dish.

  • In a bowl, combine the beaten eggs, heavy whipping cream, salt,and pepper and whisk until all the ingredients are thoroughly combined.

  • Pour egg mixture over the ham and green peppers then sprinkle cheese on top. Use a fork to stir ingredients around to make sure that all of the ham is covered with the egg and cheese mixture.
