I have always LOVED satay sauce. At a Thai restaurant, I would often order the satay skewers with the satay sauce. So you can imagine my excitement when Erika made this delicious keto-friendly satay sauce for me!

We love to grill some marinated chicken on the BBQ and then whip up some of this keto satay sauce to serve with it. It really takes your regular old grilled chicken to the next level and this meal would be a great option for a family-friendly low carb weeknight dinner.

Keto Satay Sauce

We have found that this satay sauce is the perfect sauce to have in the freezer. If you are unsure of what you want to make for dinner it can be as simple as getting the sauce of the freezer in the morning, grab a BBQ chicken and a salad mix from the supermarket on the way home and put it all together when you get home and dinner is served.

Clean Curry Pastes

Buying curry pastes at the supermarket when you are trying to avoid sugar and vegetable oils can be a little bit tricky. There are certainly lots of options available at Australian supermarkets, but it is very hard to find a clean version.

We found Mae Ploy curry pastes quite a few years ago, while we were on a holiday in Lennox Heads. They stocked these at the local supermarket and we have loved them ever since. The thing we love about these curry pastes is the ingredients. There are no sugars or vegetable oils added to these spice pastes.

We have tried the red, yellow, panang, green and massaman curry pastes from Mae Ploy and have loved them all. Recently Erika made a yellow chicken curry in the instapot using the yellow curry paste and it was delicious.

We were able to find them at our local Asian grocer in Newcastle. We have been told by others that they have found them at Coles and Woolworths. I have checked for a website or stockists but have struggled to find anything. Check out the picture below so you know what to look out for.

In this recipe, you can adjust the amount of paste you add depending on how spicy you like it. For me, this is the perfect amount of spice level.

Peanut Butter on Keto

Peanut butter is one of those controversial ingredients for people living a low carb lifestyle. Some people avoid all legumes and won’t include peanut butter in their lifestyle. Others don’t have a problem with peanut butter and are happy to work it into their macros.

For us, we are happy to consume peanut butter in recipes like this, but we also know it is a food that is easy for us to over-consume, so we tend to not keep it in the house.

When choosing a peanut butter make sure you are choosing a natural option with only peanuts or peanuts and salt as the ingredients. Most supermarket peanut butter varieties tend to include sugar and or vegetable oils which we want to avoid on the ketogenic diet.

If you are looking for an alternative for the peanut butter in this recipe you can try almond butter instead. Personally, I feel the peanuts are the key to the satay flavour and definitely prefer the peanuts in this recipe.

Our preferred peanut butter brand is Pics crunchy peanut butter, which can be found at in Australian supermarkets. We also LOVE Fix and Fogg, which is a NZ company and can be ordered on their website.

For our American friends, we like Spread the love peanut butter.

Tips

  • Be careful with the ingredients on the curry paste you purchase, as a lot will contain sugar. We prefer this one.
  • This sauce freezers well, we usually freeze the leftovers in a small glass jar
  • Adjust the amount of curry paste dependant on the level of spice and heat you prefer
  • We like to use crunchy peanut butter in our keto satay sauce as it gives it a nice texture. You can use whatever is your preference or that you have available

Serving Suggestions

  • We love to serve this sauce with some grilled chicken we have marinated in the curry paste overnight
  • It can be served with any meat or seafood. We enjoy it with some steak grilled on the BBQ
  • This sauce would be great to add some fat and protein to a vegetarian meal too

Keto Satay Sauce

This keto satay sauce can really take your favourite protein to the next level. It is a little bit spicy from the red curry paste and so creamy from the coconut milk and peanuts.

We love to have this keto satay sauce with chicken, but it would also be delicious on a steak, fish or pork. We just grill some chicken on the BBQ and top with LOTS of satay sauce.

Ingredients

  • 1 can coconut milk (400ml or 13.5 fl oz)
  • 6 tbsp peanut butter
  • 3-4 tbsp Thai red curry paste
  • 1 tsp lime juice
  • 2-3 drops liquid stevia

Instructions

  • Place the coconut milk, peanut butter and curry paste into a small saucepan and bring to the boil. Vary the curry paste amount depending on how spicy you prefer the sauce

  • Simmer the sauce until it comes together and thickens

  • Season the sauce with the lime juice, liquid stevia & salt to your taste preference

  • It is then ready to serve
