Loaded Mashed Potato Cakes are a great way to use up leftover mashed potatoes. Loaded with bacon bits, sliced green onion, cheddar cheese, sour cream, and fried to a golden brown crisp! So tasty and so good!

The current “situation” has me feeling out of sorts! I’m struggling to find the “Ba-Zinga” to do much of anything! Focus is just not in my vocabulary right now. I’m sure it will pass…eventually!

Until then, I’m just struggling along with the rest of you.

One thing I can focus on…fried foods! I can completely give 100% of my attention to crispy, crunchy, fried foods!

I’m not too picky which fried foods I want to focus on…but if it involves potatoes, I get pretty excited! So when I had a plethora of Sunday dinner mashed potatoes… What exactly is a plethora? I’d say it’s half a bowl of leftover mashed potatoes,I whipped up a batch of my favorite Bacon and Cheese Mashed Potato Pancakes for a great Monday side dish! However, you can have them any day of the week you like.

Potato cakes are great as an appetizer, a side dish, or a breakfast dish with over easy eggs. So many great ways to serve this dish. Let’s get cookin’!

How to Make Loaded Leftover Mashed Potato Patties

In a large bowl combine 3 cups mashed potatoes, 3 slices bacon crumbles, 2 Tablespoons melted butter, 1/8 teaspoon garlic powder, 3-4 chopped green onions, 1 cup shredded cheddar cheese, 6 Tablespoons flour, and 1 egg slightly beaten. Salt and Pepper to taste.

Mix until well combined.

Add 1/4 cup sour cream. Mix. Whip it…whip it good! (Devo 80s song running through your mind! You’re welcome!) You can add a dash of hot sauce if you want to kick things up a bit! It’s all up to you and your taste buds!

To form patties, dust hands with flour, place a scoop of potato mixture in your hands and create a patty.

TIP: The mashed potato cakes tend to be a bit tricky to work with. Just do the best you can. The dusting of flour will help prevent the patties from sticking to your hands. If you find the mixture too wet…add a little more flour. Just be careful not to add too much.

Heat 3 Tablespoons Vegetable oil in a large skillet over medium heat. Carefully place patties in oil. Fry until golden brown and edges are crispy.

Carefully slide a spatula under each patty and flip them over. Cook the other side. 5–7 minutes per side should do it.

There’s something magical about watching food fry! It takes patience…you don’t want to turn them over too soon. Watch for that golden crispy edge!

Serve Mashed Potato Cakes with Sour Cream and top with chopped green onions or chives and more bacon crumbles. Each bite is creamy, crunchy, and full of flavor!

Ingredients

  • 3 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 6 Tablespoons all-purpose flour
  • 3 slices bacon crumbles
  • 2 Tablespoons, melted butter
  • 3-4 sliced green onions
  • 1 egg, slightly beaten
  • 1/4 cup sour cream
  • 1/8 teaspoon garlic powder
  • salt and pepper to taste
  • 3 Tablespoons Vegetable Oil
  • Additional Sour Cream and sliced green onions for garnish

Instructions

  1. In a large bowl mix together mashed potatoes, melted butter, grated cheese, bacon crumbles, chopped green onions, garlic powder, flour, sour cream, salt, pepper, and egg.
  2. Dust hands with flour and form mixture into patties.
  3. Heat vegetable oil in a large skillet over medium heat. Carefully place potato cakes in hot oil. Fry patties until golden brown on both sides, 5 to 7 minutes. Serve with sour cream and garnish sliced onions.
