Recently, Low Carb Greek Chicken Bowls have become a meal prep staple for me. The chicken is packed with flavors, all of the vegetables are low carb, and even the tzatziki is super easy to make – no buying chemical laden store-bought tzatzikis.


Low Carb Greek Chicken Bowls

I enjoy eating beef at least once per day, but for these bowls, I've found chicken is best.

Lamb is expensive, and there's a bit of a learning curve to making it – and gyro meat blends found in the grocery stores are often laden with more fillers than actual meat and spices.

Also, chicken is quite inexpensive and low in fat, making it the perfect meal prep.

When you assemble your bowl, you can add additional fat if needed, or leave the base low-fat recipe if that's what your macros call for.

But don't think that the chicken is going to be dry!

Marinating the chicken in spices, yogurt, lemon juice, and salt pack it full of flavor and leave is super moist, even after reheating.

How To Make Low Carb Greek Chicken Bowls

  • Combine all of the marinade ingredients in a gallon ziploc bag, and added the cubed chicken breasts.
  • Seal the bag, shake to coat the chicken, and marinate at least 20 minutes, or as long as overnight.
  • Remove the chicken pieces from a marinade and cook in a large skillet with olive oil over medium-high heat for 3-4 minutes on each side. (Alternatively, you can cook the pieces in an air fryer for 11 minutes at 425 for less mess)
  • Let chicken pieces rest for a few minutes before adding them to the greek bowls.
  • To make the cucumber salad: combine all sliced salad ingredients and toss to combine.
  • To make the tzatziki: whisk all the tzatziki ingredients.
  • To serve, place the chicken, cucumber salad, tzatziki, and feta cheese in a bowl & enjoy!

  • 3 cloves Garlic
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 1 Tbsp. Oregano
  • 1 Tbsp. Red Wine Vinegar
  • For The Tzatziki
  • 1 cup Nonfat Plain Greek Yogurt
  • 1 Tbps. Lemon Juice
  • 1 Tbsp. Garlic
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
  • 1 Tbsp. Dill
  • 1/4 cup Olive Oil
