An old Irish favorite, “Boxty on the griddle, boxty in the pan; if you can’t make a boxty, you’ll never get a man.” -McGuires Irish Pub

I was so excited for this week b/c I knew I wanted to make one of my favorite appetizers, Irish Boxtys.

In college I waited tables at a world famous (seriously!) Irish pub and steakhouse in Pensacola, FL called McGuire’s.

To this day I still think Mcguire’shas the best burgers, prime rib, and pork chopsthat I have EVER had. Oh, and their Frozen Irish Coffee is AH-MAZING! Man, now I wish I was back home!

They have an knock out appetizer called Irish Boxtys. They are garlic mashed potatoes rolled in seasoned bread crumbs then flash fried and served warm with dipping sauces.

I recreated this easy dish for St Patty’s Day. Check out the recipe below!

McGuire's Irish Boxtys

Ingredients

  • 16 oz garlic mashed potatoes
  • 1 egg beaten
  • 1 cup seasoned bread crumbs
  • vegetable oil for frying
  • guacamole salsa, and horseradish sauce for dipping

Instructions

  • Using a small ice cream scoop, section out mashed potatoes into balls on a large plate.

  • Place the plate in the freezer for 30 minutes so they will be easier to handle.

  • Fill a small saucepan with oil about 3/4 way full and heat over med high.

  • Place beaten egg in one bowl and seasoned bread crumbs in another.

  • Dip potatoes in egg then bread crumb mixture then place in hot oil.

  • Once oil is hot but not smoking, you are ready to fry! {You can test the oil buy dipping the end of a wooden spoon in the oil and see if bubbles form}.

  • Fry for just 30 seconds to a minute, until crispy brown.

  • Drain on a paper towel and serve warm.

  • Serve with salsa, guacamole, and horseradish cream

Notes

Optional: You can mix shredded cheddar cheese in with the mashed potatoes and then scoop into balls and freeze.

    I've lived in Fort Walton Beach for 20 years so needless to say, I love me some McGuire's! Boxty's have got to be my favorite item on the menu! Thank you for the recipe! (and the horseradish sauce recipe- my fave!) Do you know what they add to the guacamole sauce?

    I love McGuire's!!! My husband was stationed in Pensacola for 7 months and that was our favorite place to eat and the Boxty was something we ordered every single time!!! Thank You for putting this on here because I was thinking of making some for dinner. Yay!!

I have a stupid question about the recipe, You have as one of the ingredients 16oz garlic mashed potatoes. Is this something you make, or is it a mix you buy? Where do you get them/how do you make them? Thanks

      Hi,
      This recipe is great for using leftover mashed potatoes (like from Thanksgiving). You can also buy a tub of premade mashed potatoes from the store. Usually in the refrigerated side dish section by the meat.
      Homemade is my favorite though. Here is a good recipe for mashed potatoes: https://www.4theloveoffoodblog.com/manly-meat-potatoes/ . I add garlic cloves to my water when boiling and additional garlic powder or garlic butter
      when mashing the cooked potatoes in a bowl.
