Onion. A kitchen staple, onions introduce a depth of flavour and slight sweetness, forming the aromatic base of many savoury dishes.

Peppers. This vibrant vegetable not only adds colour but also provides a subtle sweetness and crisp texture, complementing the overall profile of the dish.

Chorizo. This smoky, spicy sausage infuses the dish with authentic richness and depth, elevating the overall taste with its distinctive profile.

Garlic. An age-old flavour booster, garlic imparts a pungent aroma and robust flavour that accentuates and melds with the other ingredients seamlessly.

Chicken Breast. A lean protein source, chicken breast adds substance to the dish, absorbing the surrounding flavours while offering tender, juicy bites.

Fajita Seasoning Mix. A zesty blend of spices, the fajita seasoning imparts a warm, spicy kick, enhancing the dish's Mexican-inspired roots.

White Rice. Acting as a flavour sponge, white rice absorbs the rich broth and other ingredient essences, providing a hearty base and creamy texture to the dish.

Chopped Tomatoes. These lend a tangy sweetness and a touch of acidity, breaking through the richer elements and adding a saucy consistency that binds the ingredients together.

Chicken Stock. This liquid gold introduces depth and savoury notes, ensuring the rice is flavorful and the overall dish boasts a well-rounded taste profile.

Beans. Whether kidney, black, or mixed, beans introduce a satisfying, earthy depth, enriching the dish with both texture and protein.

Low-fat Cheddar. This cheese adds a creamy, melty element, introducing a touch of indulgence without overwhelming richness, making every bite irresistibly gooey.

1 tsp oil

1 onion, chopped

1 green pepper, chopped

50 g chorizo, chopped

15 g garlic, pureed or very finely chopped

500 g chicken breast, chopped

2 tbsp fajita seasoning mix

300 g white rice, uncooked weight

Heat the oil in a large pan on medium/high heat and add the onion, peppers and chorizo and fry for about 5 minutes until the vegetables have softened.

Storage Tips

To Store

As soon as the rice has reached room temperature, get it into the fridge! This will keep in the fridge for about a day before drying out.

To Reheat

There is a misconception about reheating rice. It's fine. Just make sure you microwave it so it's piping hot. The issue with rice is that when it's left at room temperature a bacteria found in rice produces a toxin which can cause stomach pain and sickness.

To Freeze

Not recommended. Reheating frozen rice often makes it go stodgy and unpleasant to eat. Eating it fresh keeps it light, fluffy and tasty.
