If you’ve ever thought out loud “what should I eat for dinner,” then yes, I can relate and oh, how I adore a one-pot dinner. In my pre-kid/single days, I’d even (and often) eat that meal right out of the pot to spare myself having to clean an extra dish. There’s something so satisfying about being able to throw together a bunch of ingredients in one pot and in a few minutes have it all come together for a delicious one-pot dinner.

If you’ve been following this blog for a while, (or if your new here) one thing you either already know or will soon is that my whole thing is about picking and choosing the f*cks I need to give to make it through my days in one piece.

I’ve become a boundary bitch in these pandemic times, and balancing the juggle of wanting to make healthy, nutritious and delicious meals for my family while having little time or energy to do that has become a project that I’ve become intentional about.

Yes, of course, I could just run through the El Pollo Loco drive-through…again. Or order postmates or door dash…again…but there’s only so much fried chicken tenders and french fries my kids will eat before even THAT becomes something they don’t want.

So I’ve gone down the rabbit hole of researching one pot dinner ideas for myself and then to ultimately share with you, sweet reader, who found this blog post, with recipes that are intended to be easy, healthy, and family-friendly. Even the pickiest eater might actually try this. And when it’s all said and done, why not pair these with some simple easter desserts to really finish off a good meal?

How to cook a boiled dinner in one pot

That header is a bit confusing – because often when we think of boiling things, we might think of pasta, soups, potatoes or vegetables, or even chicken.

But in truth, when we’re cooking one pot meals we’re boiling all of the ingredients only if we’re using a liquid of some kind (think spaghetti sauce in one pot with noodles, or poaching eggs in a tomato broth, or yes even boiling potatoes for making mashed potatoes in one pot.)

What Do You Need for One Pot Meal Prep Success

Some essential ingredients for one-pot dinner ideas are:

– Onion (try frozen onion for a time saver op!)

– Garlic (Try tube garlic for, yet another time saver!) – yes it’s not “as good.” But IDGAF when it’s between getting it on the table and getting it on the table “perfect.” Also you can grate a bunch of garlic and freeze it in olive oil to save your future self some time too.

– Vegetables (e.g. carrots, celery, bell peppers) – You guessed it! Frozen is better sometimes!

– Protein (e.g. chicken, beef, shrimp)

– Seasoning (e.g. salt, pepper, herbs)

– A liquid (e.g. broth, wine, sauce)

Most of the below healthy one pot meals will have suggestions of most of these above.

Cast Iron Pans

Cast iron pots or pans are perfect to start an easy one pot meal on the stove and transfer to the oven. In fact, there are definitely some of these below.

Highly recommend getting a cast iron pan but buyer beware! You cannot wash them like a traditional pan – in fact, you’ll want to not wash them at all – just scrub off the bits that get stuck, and let it dry completely (I usually towel off and then set it on the stove with the heat on to dry any other bits of water.) If you try to wash/dry a cast Iron pan like you do any other pan, you’ll end up with a rusty unusable mess (but have no fear you can restore a cast iron pan!)
