Ingredients Needed:

To make this recipe you will need the following ingredients:

  • Potatoes: a floury variety of potato is a must if you want perfect oven baked fries. I like to use russet potatoes, but in the UK varieties like King Edwards and Maris Pipers are a good choice
  • Low Calorie Spray: I prefer to use olive oil spray without any added emulsifiers.
  • Salt and Pepper- These basic yet essential flavour enhancers are key for elevating the taste of your dishes. No food will ever be bland when these are used to season to taste.
  • Other seasoning: This will all depend on the type of fries you want to make, keep it simple with just some salt and pepper or create a seasoned variety using one of my spice mixes below

Spice Mixes for Fries

Need some seasoning ideas to vary these perfect baked oven fries? Try some of the below seasonings.

Cajun Seasoning Mix

This is enough mix for a 4 person serving of fries

  • 2 teaspoon of paprika
  • 2 teaspoon of cumin
  • ½ teaspoon of onion powder
  • ½ teaspoon of thyme
  • ½ teaspoon of oregano
  • ¼ teaspoon of cayenne pepper (add more if you like them super spicy)
  • salt and black pepper

(I mix this all up using a mortar and pestle)

Garlic and Herb Mix

This is enough mix for a 4 person serving of fries

  • 2 cloves of garlic, crushed
  • 1 tablespoon of Italian mixed herbs
  • sea salt

(I mix this all up using a mortar and pestle)

BBQ Seasoning Mix

This is enough mix for a 4 person serving of fries(double up to serve more)

  • 1.5 tablespoon of tomato paste
  • 1.5 teaspoon of paprika
  • ½ teaspoon of smoked paprika
  • ½ teaspoon of onion powder
  • ½ teaspoon of garlic powder
  • ½ teaspoon of chilli powder
  • ½ teaspoon of cumin
  • ½ teaspoon of sweetener
  • ¼ teaspoon of mustard powder
  • ¼ teaspoon of oregano
  • a little salt and black pepper

(I mix this all up using a mortar and pestle)

Once you have soaked chips for 45 minutes in ice cold water and patted dry. You add them to a bowl, spray with some low calorie spray then add in your choice of seasoning and toss to coat. Then cook as per the recipe below.

Trust me, I've been there. But now, with this game-changing tool in my kitchen arsenal, I'm wondering why I didn't invest sooner! It's lightning-fast and produces perfectly shaped fries effortlessly, thanks to its two different size blades.

Some might call it lazy, but hey, efficiency is key!

Simply pop a whole potato into the chipper, press down the handle, and voila! Instant chips. And guess what? You can even leave the skin on for added flavour and fibre —skin-on chips are a delight! Of course, if you prefer the traditional slicing method with a knife, that works too. But trust me, once you try this potato chipper, you'll wonder how you ever lived without it.

Don't forget to grab a super large baking sheet and some parchment paper too! Here's why: the key to achieving the perfect oven-baked fries lies in giving them enough space to breathe. Ever wondered why your fries end up soggy and lackluster? It's all about the heat circulation. When you cram them too close together on a tray, the heat can't properly circulate around each fry or chip. Instead, they end up steaming, resulting in a less-than-appetizing texture. Trust me on this one—I've learned the hard way! So, spread those fries out on a spacious baking sheet lined with parchment paper, and get ready for crispy, golden perfection with every bite!

Freezing Tips

Ever wondered if you can prep and freeze these fries in advance? The answer is a resounding yes! It's actually something I do quite often. However, there's an extra step needed to prevent them from going brown when frozen. First, add them to a large saucepan of water, bring them to a boil, then turn off the heat and leave them in the water for 5 minutes (no longer). Drain and allow them to cool. Then, spread them out on parchment paper placed on a tray, and carefully pop the tray into the freezer. Once frozen solid, transfer the fries to freezer ziplock bags to keep them from sticking together.

When you're ready to cook, simply place the frozen fries directly onto a baking tray and spray generously with low calorie spray, toss to coat and then they are ready to go in the oven as per the recipe below. I recommend giving another spray half way through cooking time.

And here's a pro tip: You can also freeze these fries already seasoned with the spice mixes mentioned earlier, making meal prep a breeze!

Perfect Baked Oven Fries

Ingredients

  • 1kg/2.25lbs of russet potatoes
  • sea salt
  • cooking oil spray

Instructions

  1. Slice potatoes to desired chip/fry shape, can peel or leave skin on.
  2. Add to a large bowl of water with ice and soak for approx 30 minutes.
  3. Drain and rinse under cold water, then pat dry between a clean towel or kitchen paper.
  4. Preheat oven to 220c/425f (may need to adjust for fan ovens)
  5. Line a large baking sheet with parchment paper and spray with low calorie cooking spray
  6. Add the fries/chips well spaced out onto the baking sheet, add a pinch of salt sprinkled evenly over the top and then spray over the top with more cooking oil spray
  7. Place in the oven and bake for about 40-45 mins until golden and crispy, turning over around the 25 minutes mark. Spray with more low calorie spray if needed.
  8. Season with more sea salt to your desired taste and enjoy!!!

Air Fryer Method:

  1. Slice potatoes to desired chip/fry shape, can peel or leave skin on.
  2. Add to a large bowl of water with ice and soak for approx 30 minutes.
  3. Drain and rinse under cold water, then pat dry between a clean towel or kitchen paper.
  4. Spray generously with low calorie spray and season well with salt
  5. Add to air fryer basket and cook at 200c/400f of air fry for approx 30 minutes until golden and crispy, shaking the basket a couple of times through cooking and spray with more low calorie spray as needed.
  6. Season with more sea salt to your desired taste and enjoy!!!
