Pressure Cooker Chicken Cacciatore Recipe

  • 3 pounds uncooked boneless, skinless chicken breasts, cut into bite-size pieces or 4 chicken thighs with bones
  • 1 pepper any color is fine, sliced
  • 2 tablespoons minced garlic
  • 1 cup of diced tomatoes
  • 1 can vegetable broth or vegetable broth
  • 3/4 tsp dried crushed oregano
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup of diced onions (you can leave these out if you want) I love them, my kids, not so much.
  • Parsley to top the dish

In a shallow dish, combine everything but the chicken and the soup.

Place the soup at the bottom of the pressure cooker

Then layer the chicken thighs in the pressure cooker

Add the ingredients in that you placed in the bowl (Parsley is for presentation at the end).I keep the pressure cooker set 15 minutes for thighs.

When the timer goes off, release the steam valve, using proper precautions. That means using your silicon gloves and facing the steam away from you!

Open the lid and stir.

Let the chicken sit for a minute or two

Remove the chicken to plate and top with parsley
