Happy Friday friends! Today I’m so excited to share a review of Heather Christo’s new cookbook Pure Delicious. Along with the review I’m also sharing one of the fabulous recipes you can find in it, Radicchio Salad with Raspberries, Radishes, Prosciutto, and Raspberry Champagne Vinaigrette.
Let’s start with the cookbook. Pure Delicious is a cookbook for people who have food allergies, sensitivities, or a family member or friend who may struggle with them. All of the recipes in the cookbook are gluten, dairy, egg, shellfish, peanut, tree nut, soy and cane sugar free. Now before you start judging, wondering what could there possibly be left to eat, let me tell you I’m skeptical when it comes to cookbooks written for those with food allergies. I own several cookbooks of this nature and find myself rarely even opening them because the ingredients are either too expensive and hard to find or the recipes are ones that don’t even appeal to me and I know won’t appeal to my husband. However, if you’ve ever visited or made anything from Heather’s blog, you know that this woman is beyond talented in the realm of making allergy friendly food look and taste amazing!
Upon opening the cookbook I was immediately sucked into Heather’s story on how she came about creating allergy friendly recipes. Her dedication and determination to make food that her children could eat and not suffer consequences from afterwards is inspiring. While I myself have never been tested for food allergies, it’s something that I’ve recently considered as I tend to have some sensitivities towards certain foods. My husband on the other hand was unfortunately diagnosed with ulcerative colitis back in college and is affected by many foods. This autoimmune disease currently has no cure and it’s a real asshole…excuse my language, but it you have it or know anyone who does I’m sure you’ll agree. We’ve tried numerous diets, but the problem is they are all so restrictive and he feels like he is being deprived of so many of his favorite foods. Pure Delicious was an eye opener for me. As I flipped through all the recipes I found myself thinking, “he would eat this, and this, and definitely this…” Recipes such as mustard crusted potatoes, Asian salmon burgers, pesto roasted chicken, shredded beef tostadas, crispy salmon salad, waffles, pancakes and even chocolate chip cookies! It was the first time that I’ve gone through an entire allergy-friendly cookbook and wanted to make and eat everything in it.
I of course was immediately drawn to the salad section of this book. I have an absolute love for beautiful, colorful, flavorful salads and Heather is a genius when it comes to creating them. When I was trying to decide what recipe to share with you from her cookbook I knew it had to be one of the salads since that is what initially drew me to her blog. I couldn’t resist the Radicchio Salad with Raspberries, Radishes, Prosciutto, and Raspberry Champagne Vinaigrette. The colors in the salad, the array of sweet, bitter, salty and savory flavors and the fact that raspberries and radishes are so delicious this time of year sealed the deal. It was just as delicious as I thought it would be and I found myself picking at it all day long after photographing. Not only do I highly recommend this salad, but anything in the Pure Delicious cookbook as well, it’s definitely worth checking out!
Yield: 2-4 servings
Radicchio Salad with Raspberries, Radishes, Prosciutto, and Raspberry Champagne Vinaigrette

Ingredients
Salad
- 4 cups radicchio torn into bite-size pieces
- 4 ounces prosciutto, thinly sliced
- 6 radishes, thinly sliced
- 1 shallot, thinly sliced
- 1 cup fresh raspberries
Raspberry Champagne Vinaigrette
- 1/4 cup fresh or frozen raspberries
- 2 small cloves of garlic, coarsely chopped
- 2 tablespoons honey
- 1/4 cup champagne vinegar
- 1/4 cup olive oil
- Kosher salt
Instructions
- In a blender add all of the ingredients for the vinaigrette and puree until smooth.
- In a large serving bowl or on a platter combine the radicchio, prosciutto, radishes, raspberries and shallot.
- Drizzle the salad with the vinaigrette and gently toss together just before serving.
- Serve immediately.
Notes
If you don't have a shallot or the bagger at the store forgets to put it in your bag a very thinly sliced red onion will work, although it will have a stronger onion flavor.
