Everybody loves bacon. Okay, maybe 2 or 3 people on Earth don’t like it, but everybody else does. Facts! It’s crispy, salty, super flavorful and all around friggin’ delicious. Today I’m showing you how to make one of my favorite bacon recipes that my family devours every time I make it. It’s perfect for the upcoming Fall weather and is a great addition to your weekly meal plans or weekend brunch menu. This is another one of my Real People Meals. Bacon Smoked Sausage O’Brien

I can still remember trying my best to stay in the bed for as long as I could on a typical Saturday morning, as a teen. Nothing could get me to fly out of bed faster than the smell of my mom making either some bacon or homemade biscuits. You’re gonna get that same rush reaction from your peeps when you make this dish. If you want to get the family together, just make this and watch them come running.

If you wanna serve this for dinner, just throw some broccoli on the side and some crescent rolls and call it a day. For breakfast/brunch, it can be paired with eggs, quiche, sliced fruit or prepare for a food coma by coupling with pancakes.

Bacon Smoked Sausage O’Brien is a pretty simple recipe and requires just a few ingredients and a really good non-stick pan or cast-iron skillet. Here’s how to make it.

Step 1

Heat your skillet or in my case, a wok, over medium/high heat. While your pan is heating, diceyour onions and smoked sausage.

Step 2

Add your smoked sausage and onions to the pan and stir to prevent sticking. You don’t need any oil at this point. Your onions will cook right in the fat of the sausage.

Step 3

Add Garlic and Stir. I like to use these frozen crushed garlic cubes. I usually find them in the freezers with the frozen veggies. Next time you grocery shop, grab some of these and the sauteed onion ones, I promise you won’t be sorry. These suckers work great in a crunch or anytime you don’t feel like crushing fresh garlic. Add 1 or 2 cubes depending on your love for garlic, but 1 is sufficient.

Step 4

Add 2 Tbsp of your favorite cooking oil to your pan. In this case I used plain ole vegetable oil.

Next you’re gonna pour in your frozen Potatoes O’Brien. The cool thing about using frozen vs. fresh in this recipe is #1 it saves time. #2 your peppers and extra onions are already included in the package.

Step 5

Toss in your bacon and stir. I used real bacon bits in this recipe, but you’re welcome to pre-cook some bacon for your recipe. Now just let your potatoes do what they do.

If you like your potatoes crispy like I do, you’re gonna have to cook this much like you would hashbrowns. You’re gonna let it cook/fry for periods at a time (don’t mess with it) and then periodically flip portions over with your spatula, to crisp on the other side until the texture is how you like.

Sometimes I toss on my lid to soften the potatoes a bit, but be sure not to leave the lid on for more than a few minutes so your potatoes won’t sog.

Step6

Season to taste with Garlic Salt and Pepper, giving one last flip/mix before you serve, to distribute your seasoning well.

Ingredients

  • 1 pkg Polish Sausage (Diced)
  • 1/2 Sweet Onion (Diced)
  • 1/2 cup Bacon (Cooked, Chopped)
  • 1 bag Frozen Potatoes O'brien
  • 1/2 teaspoon Crushed Garlic
  • 3 Tbsp. Oil
  • Garlic Salt
  • Pepper

Instructions

  • Heat skillet or wok, over medium/high heat. While pan is heating, dice onions and smoked sausage.

  • Add smoked sausage and onions to the pan and stir to prevent sticking. Onions will cook in the fat of the sausage.

  • Add Garlic and Stir. Add 1 or 2 cubes depending on your taste.

  • Add 2 Tbsp of cooking oil to pan.

  • Pour in frozen Potatoes O’Brien.

  • Add bacon and stir. Allow potatoes to sweat. If you like your potatoes crispy, cook them much like you would hashbrowns. Let them cook/fry for periods at a time (don’t stir them). Periodically flip portions over with a spatula, to crisp on the other side, until the texture is how you like.

  • Season to taste with Garlic Salt and Pepper, giving one last flip/mix before you serve, to distribute your seasoning well.

Notes

The cool thing about using frozen vs. fresh in this recipe is #1 it saves time. #2 your peppers and extra onions are already included in the package.

If you don't have fresh crushed garlic or jarred, you can substitute with frozen crushed garlic cubes.

You can use pre-cooked bacon or bacon bits
