Ridiculously Easy Crock Pot Recipes (2024)

I love to use my crock pot during a busy week (so, every week during the school year.)

Here are a few of the simplest recipes I have used. Simply throw the ingredients in the crock pot before you head out the door in the morning on the low setting and you will have dinner ready when you get home.


Pulled Pork Sandwiches

These are great for parties.

Use a dry rub to coat a pork tenderloin. Cover the tenderloin with plastic wrap and put it in the fridge for 30 minutes or more. Remove the plastic and put the tenderloin in the crock pot along with a bottle of dark beer.

After it cooks on low for 4-6 hours, remove the pork and shred it on a plate using a fork. Empty the crock pot of the beer. Return the pork back to the crock pot, mix the pork with a bottle of your favorite BBQ sauce. Let it sit in the crock pot for another 20-30 minutes to heat the pork and BBQ sauce through.

Serve on buns. Serve with potato chips, baked beans, cole slaw, etc. Delish!

Frozen Chicken Solutions!

Do you need to make dinner for tonight, but all you have are these in your freezer? No problem - the next recipes you can use frozen chicken breasts! whoo hoo!


BBQ Chicken

Grab a pack of frozen (or thawed of course, I just always forget to thaw anything out) of chicken. Most of the packs I use are boneless, skinless breasts weighing about 3.5 pounds.

Put the chicken in the crock pot. Pour a bottle of your favorite BBQ sauce over the chicken. Add any seasonings you like as well. Add a little water; or beer if you have it. Put the cover on, and turn it on.

When you get home, take the chicken out and shred it on a plate using a fork. You can serve it on buns, or on its own with a nice side.

Salsa Chicken

Grab a pack of frozen (or thawed of course, I just always forget to thaw anything out) of chicken. Most of the packs I use are boneless, skinless breasts weighing about 3.5 pounds.

Put the chicken in the crock pot. Add enough salsa to coat the chicken. Add about a cup of water. Put the slow cooker on low and cook for 4-6 hours. Remove the chicken and shred. Serve it on tortillas with cheese and sour cream. YUM!

**You can also use inexpensive meat for this recipe. Flank steak is a great meat for this. I can't stop eating it.

Buffalo Chicken Sandwiches

Another party favorite of mine.

Grab a pack of frozen (or thawed of course, I just always forget to thaw anything out) of chicken. Most of the packs I use are boneless, skinless breasts weighing about 3.5 pounds. (Sensing a pattern here?)

Put the chicken in the crock pot along with a bottle of Frank's Red Hot Sauce and a dry packet of ranch seasoning/salad dressing mix. Cook on low for 4-6 hours. You know the drill...shred the chicken with a fork. Return to the crock pot and a little more red hot sauce. Let it sit another 20-30 minutes and serve. These are great on buns with ranch dressing. I use carrots and celery as my sides. These are addicting. Seriously.

Easiest Vegetable Side Dish Ever!

Roasted Veggies



I use this recipe when I need a vegetable side dish. It is so simple, fresh and absolutely cheap! Everyone loved the veggies...even the kids! I bought a giant bag of carrots for less than 2 dollars. Whoop whoop!

Chop up your favorite "sturdy" vegetables. I just used carrots and zucchini. I made the cuts pretty thick. I didn't want any veggies that would get too soft. Add a few splashes of olive oil along with a dry packet of italian dressing. Turn the crock pot to low for a few hours. Delish!

Burrito Night!

My family loooves burrito/taco night. However, with our soccer schedules we don't get home until late almost every evening. Translation: I am grouchy and don't want to make something that is a lot of trouble. So I started making the taco meat in the crock pot! Yay me!

Simply take your 2-3 lbs. of ground meat or ground turkey (I prefer turkey, much nicer texture and it is healthier) and put it in the crock pot with a cup or so of water. It is totally find if the meat is frozen. Add 2 or 3 of your favorite taco seasoning packets. Cook on low while you are running kids all over town and come back to ready to eat taco meat!

Once we get home my son warms up refried beans in the microwave, my daughter grates some cheese and we are ready to fill the tortillas. Yummmmmers...
