I first experienced this dish at Two Sons Bistro, which is a restaurant in Malaysia. The clams (that can also be exchanged to mussels) are arguably the restaurant’s most popular order. And it currently has a myriad of sauce options to choose from.

However, the spicy garlic butter sauce — known as the butter cream chilli — is still one of its best offers. But now you can make it at home with this simple recipe!

This spicy garlic butter clams recipe is cooked without the use of any wine. The base of the sauce is made from butter, oil, chili flakes, and garlic. Then the heavy whipping cream, lemon juice, and additional seasonings are also added.

It’s actually pretty easy to make once you have all your ingredients set aside.

  • Frozen precooked clams
  • Garlic
  • Butter
  • Oil
  • Chili flakes:Adjust to taste.
  • Heavy whipping cream
  • Paprika
  • Salt:Adjust to taste.
  • Sugar:Adjust to taste.
  • Curry powder(optional)
  • Lemon juice

how to make spicy garlic butter clams (without wine)

  1. Melt 3 tbsp butter in a bit of oil in medium high heat. Once the butter almost completely melted, add minced garlic and turn heat down to medium low. Stir for a minute then add chili flakes. Stir and let it cook for 1-2 more minutes, being careful not to burn the garlic.
  2. Pour in heavy whipping cream and add paprika, salt, sugar and curry powder (optional). Stir and bring to a simmer.
  3. Once it’s simmering, add the precooked clams. Turn heat up to medium and cover with a lid for a minute.
  4. Remove lid and let it continue simmering for a few minutes or until the sauce thickens. Turn off heat and add lemon juice and optional but highly recommended, add the remaining butter. Serve while hot with garlic bread and enjoy!

  • I used frozen precooked clams for this dish to save time but feel free to use fresh ones.
  • The curry powder is optional but highly recommended if you have it on hand. It adds great flavor to the dish. The small amount will not make the dish taste like curry.
  • Once the sauce thickens, it will get saltier so adjust the amount to taste. If too salty, add more heavy whipping cream.

  • 2 lbs frozen precooked clams
  • 10 cloves garlic minced
  • 4 tbsp butter
  • 1/2 tbsp oil
  • 2 tsp chili flakes adjust to taste
  • 1 cup heavy whipping cream
  • 2 tsp paprika
  • 3/4 tsp salt adjust to taste
  • 2 tsp sugar adjust to taste
  • 1 tsp curry powder optional
  • 2 tsp lemon juice
