Egg Roll-Up with Spinach and Ham as posted in 2011...

I know, don't you hate when people say that? I do, depending on my mood, but when I sit down to blog, it comes out of me naturally. I guess it's my way of starting.
Anyhoo, Jenny emailed asking for an old Egg Roll-up idea I posted back in 2011. Well, much like the Pancakes, it brought me down memory lane. I found two videos of me making roll-ups, and I'm pregnant in one!
Here I am March 16, 2011, making the Spinach Egg- Roll-Up.
I still had a few weeks to go before my due date, but little did I know my water would break that night! Little Bean was born the next day.
And here I am September that same year making a Spinach and Turkey Bacon Roll-up.
Boy, how I miss recording these and wearing all my cheesy green shirts. Unfortunately, every attempt I've made to get back to them have fallen flat. I'm in such a different place now. One day, maybe. In the meantime, I'll keep posting when I can.
Here's the original recipe I posted back then. This one is fun, and you can put anything topping you want in them. I'm not a big cheese fan on eggs, but it would make a great addition as well.

Spinach Ham Omelet Roll-Up

Egg Roll-Ups are a fun twist on omelets when you're bored of eggs. This version uses ham and spinach, but you can top with pretty much anything you like!

Ingredients
- 1-2 slices of deli ham based on thickness
- 2 eggs
- handful of baby spinach chopped
- Kosher Salt and Pepper
- cheese or other toppings to taste optional
Instructions
Warm a non-stick skillet over medium-high heat. Grill the ham, flipping once. Remove the ham from the skillet and set aside.

Meanwhile, crack 2 eggs in a small bowl or mug and whip with a fork.
2 eggs
Lower the heat to medium-low and spray the skillet with non-stick cooking spray.
Add the egg to the skillet and swirl around to cover the bottom of the pan. Sprinkle with a bit of salt and pepper.
Kosher Salt and Pepper
Top the cooking egg with the spinach and cover.
handful of baby spinach chopped, cheese or other toppings to taste
Cook for approximately 2-4 minute until egg is no longer runny on top.
Uncover, lay the ham slice on top of the spinach.
Slide a spatula around the edges of the egg. Then slowly take one edge and begin to roll over on itself using a finger to hold it in place.
When finished rolling, cook for an additional 30 seconds to help it seal.
Enjoy!

No bread is used, what you are seeing in the photo is just the egg - it has browned in the pan. 🙂

I used your recipe as a guide and have made this several times (most mornings since I saw it). I make it with 1/2 C egg substitute and added 1 T of 2% shredded cheese. It's super yum, and I like to serve it with some sauteed mushrooms on top! Thanks for the great idea!!!

Looks yum! I don't have much ham these days but I want some!
I also recommend my boyfriends 'signature' scrambled eggs. An inch of two of spring/green onion chopped fine, some chopped herbs if you like them, splash of milk, small bit of grated/chopped cheese and a pinch of curry powder (or even cinnamon) in a couple eggs. The spring onion and curry powder really makes it interesting, and it's very quick, especially in the microwave.

Roni this looks awesome, and you are ADORABLE!!!!
Like you, I would typically just cut mold off of food and eat the rest, but I saw a news piece that said there can be "roots" that extend beyond where you can see mold, and there can be spores you can't see. It isn't necessarily dangerous for all foods, but for soft porous food, the entire food can be contaiminated...

Sounds Great Roni! I too am in a breakfast slump and decided to make this today. I used turkey bacon crumbles and egg whites to make my omelet roll up. The additions can be endless! Thanks for the idea!

I'm totally in an egg slump, too and after watching this, I'm putting a new pan on my list so I can make a fun rolled omelet! I used to use a nonstick crepe pan, but it finally wore out after 10 years and the only other egg-worthy pan I have is too small. Thanks for the idea...I never thought of putting a whole slice of ham in there...I always chop it up, but the whole slice looks so pretty.
