Didn’t have any short grain rice so I used basmati rice and it worked great! Grocery store didn’t have boneless skinless thighs so I just deboned regular thighs and kept the skin. Happened to have TJ’s Thai lime and chili cashews and they added the perfect amount of spice. Pretty flavorful recipe- would make again!

We don't eat chicken, but this was great with tempeh (sliced & cooked atop the rice; no initial browning). I used two peppers for more veg and added a few shakes of tumeric for color.

Made this last night with the following changed suggested by others: I doubled the garlic and ginger, and used jasmine rice, light coconut milk, and added 1 Tbs garam masala, 1 Tbs fish sauce, and 1 seeded jalapeño pepper to the rice and broth. Those changes made it anything but bland, it was a delicious hit! Will definitely make it again, and it was easy. A great recipe that you can tailor to your liking with all sorts of additions or substitutions. Five stars!

Used chickpeas instead of chicken. Added half jalapeño with garlic and ginger. Added yellow and orange peppers eppers and broccoli. Used jasmine rice and cooked for 15 min. Really good!

I had a friend from Afghanistan who made this dish, and called it Bor Pilau. Some carrots add color when thrown in about halfway through cooking.And when I was in college, the Fanny Farmer cookbook has a very similar recipe made with chicken or pork chops, and deemed it South American. Guess a good idea is a good idea the world over.

Loved this, definitely add hot sauce, which I would never have guessed to do. I'd double the ginger, salt liberally, and add a half cup of raisins which added some sweet depth. I used Calrose rice. This is really good and really easy.

Made with basmati rice. Loved it with green Tabasco. Extremely easy, and it was the best new recipe I’ve made in a while.

Very important to use large crystal kosher salt in this measurement. Substituting fine grain sea or table salt adds more sodium, simply because fine grain salt will amount to greater volume.

This was beyond the beyond of bland. I added turmeric, cumin and coriander and still so boring. I see why it recommends hot sauce

No oven?

Has anyone tried this on the stove top with no oven?

Solid recipe that’s on the bland side without the hot sauce. I stirred in Sirachi, but think adding some red pepper flakes to the ginger sauté might add the needed heat. I chopped my cashews too fine; larger pieces would have added more crunch. Good enough to make again, and delicious for lunch the next day.

Loved it! The fragrance and notes reminded me somewhat of Hainanese chicken rice with a twist. Like many others, I doubled the ginger, garlic, added onions, fish sauce, garam masala, some green beans (sauteed first with the onions) and T Joe's chili lime cashews because that's what I had on hand. Served with T Joe's green dragon hot sauce which was fantastic with this. Comforting dish that came together surprisingly fast, would definitely make it again!

Took a cue from others and added about a tbsp of garam masala, some fish sauce and red pepper flakes. Delicious. Will try it with chicken breasts next time.

This has become one of our regular dinners. I make it per the recipe - except I add extra cashews because I think that's the best part. When I first made it, I used less ginger than the recipe called for, which was a mistake. The ginger isn't harsh at all, it blends in with the other flavors. I love this dish! Fairly simple, absolutely wonderful.

I also didn't have short grain rice and used it with basmati - all good! Next time will add more chicken since it was more rice than we needed. Will definitely make this again (and again...).

I highly suggest you add some flavor, but this recipe makes a super yummy base!! I added lime juice, lemongrass, double the garlic (I'm just not a huge fan of ginger, but if you are, double that too), a Anaheim pepper, a little extra salt, and some snap peas. It's my husband's new favorite dish! He asked me to double the recipe next time because he loves it for lunch!

Really delicious! My only modifications were two tbsp green curry paste and some red pepper flakes added to the garlic when sautéing. (Had to omit the bell pepper sadly but my hubby is not a fan) I used sushi rice that was well rinsed. I was a bit dismayed when the end result did not appear to resemble the photo. Mine looked more mushy. I did make a sauce to drizzle over the top. (All the Asian flavors) it was a great dinner, very little prep and my family loved it!

Wish I read the comments before. Disappointingly bland if you follow the measurements in the recipe, next time I’ll amp up all the herbs and spices.

I made this recipe for dinner tonight. I’m glad I had a hot and sweet sauce for it. There’s something not quite right about this recipe as far as taste goes. It’s good but something is missing.

I added some hot peppers and a heaping tablespoon-ish of thai green curry paste. Turned out delicious!

Five stars from the whole family, including picky 14yo!! Great weeknight meal. Used Penzey’s dehydrated ginger (2t=2T fresh), a smallish yellow onion because I didn’t have scallions, and regular long grain white rice (well-rinsed). Added 1/4t crushed red pepper flakes. Prepared as directed but added peas at the end and put back in the oven for 5 min.

1) Way too much rice relative to the amount of chicken and 2) as others have noted, it is bland, bland, bland.
