The last few days have been very BUSY! Lots of exciting things are happening here and both sets of grandparents have come to share the fun!

One thing we girls like to do when the grandmas come is GO SHOPPING. Is anyone really surprised that four ladies who only get together a few times a year want to go shopping? Probably not. And when we go, we make a day of it…really, the WHOLE day. We left around 9:30 am and returned home around 9:30 pm. Of course, we ate at the mall…but what about the grandpas, grandson and dad that choose to stay home…what do they eat?

Easy answer…Taco Soup!

This is a very hardy soup that feeds a crowd, but can easily be cut in half if needed. I call this a very “forgiving” recipe, which means exact ingredients can be substituted easily and it still tastes great.

It can be made on the stove and eaten the same day, made ahead and reheated, or dumped in the crock pot and cooked all day. This recipe should be the “poster child” for Quick & Easy…not to mention inexpensive, for the amount of people it feeds. It can be made with all “generic” ingredients which makes it even less expensive. It can be served with sandwiches but is hardy enough to stand alone. I serve it with tortilla chips but it’s great with bread or crackers. In January, my mother-in-law and I are preparing dinner for two hundred people, and we are strongly considering this soup….It’s that easy and that good.

Here’s the Recipe:

This is most of the ingredients…I forgot to put the hamburger

Brown hamburger with diced onions until meat is no longer pink.

When meat is done drain excess fat.

We don’t like “crunchy” onions so I start my onions first. After cooking for about 3-4 minutes I add the meat.

Dump all ingredients into a largestock pot or crock pot

If cooking in stock pot: Bring to a boil, cover, reduce heat and simmer about two hours

If using crock pot: Cook on low all day or on high 3-4 hours

Top with cheese, sour cream or jalapeno peppers

We love it with homemade tortilla chips (or store bought ones too)

Ingredients

  1. 2 lbs hamburger
  2. 1/2 onion - diced
  3. The first 5 ingredients should be added undrained
  4. 1 can chili beans
  5. 1 can pinto beans
  6. 1 can kidney beans
  7. 2 cans diced tomatoes
  8. 2 cans Rotel tomatoes (10 oz each)
  9. 2 cans Mexicorn - DRAINED
  10. 2 packages dry ranch dressing mix
  11. 2 packages taco seasoning (1 if less spice is desired)
  12. 2 cups water

Instructions

  1. Brown onions and hamburger until meat is no longer pink
  2. Drain
  3. Combine everything in a large stock pot or large crock pot, being careful to only drain Mexicorn
  4. In Stock Pot: Bring to a boil, cover and simmer about 2 hrs
  5. Crock Pot: Cook on low all day or high 3-4 hrs
  6. Serve with Tortilla Chips, crackers, French bread or corn bread
  7. Optional Toppings: sour cream, cheese, jalapeno peppers

Notes

  1. A Very Forgiving Recipe...
  2. I often substitute or add black beans. Any of the beans (except chili) could be substituted for something your family likes better
  3. Mexicorn is sometimes hard to find. I have used frozen or canned corn with a small can of diced green chilis
  4. The recipe calls for "Rotel" tomatoes but I used the generic tomatoes with chilis...it's the same
  5. Chicken could also be substituted for beef.
  6. If you wanted to go "meatless" just leave out the beef and add a couple more cans of your favorite beans.
