I promise you that this fathead recipe will be a life saver, especially if you’re dealing with picky eaters. Take it from my friend who has a 12-year-old with Type 1 diabetes and found a new standard dish to cook on busy days.

“Fat Head Dough” Keto Low-Carb Bagels Recipe

The recipe makes 6 standard-sized bagels.

Ingredients:

  • Mozzarella Cheese - Use low-moisture part-skim shredded mozzarella.
  • Cream cheese - Use full fat or low-fat cream cheese.
  • Egg - Use large or extra-large egg.
  • Almond flour - It needs to be superfine Almond flour. I like to use the Blue Diamond brand.
  • Baking powder.

Optional ingredients:

  • 1 teaspoon spices such as dried oregano, basil, or garlic powder

How to make Fathead Bagels

  1. Preheat the oven to 425°F (220°C). Line baking sheet with parchment paper.
  2. Microwave Mozzarella and cream cheese in a bowl until soft (for about 40 seconds). If you don’t have a microwave, melting ingredients on the stovetop will work too.
  3. Add egg, almond flour, remaining ingredients, and spices. Stir and blend well using a spatula into a dough ball.
  4. Optional – you can proceed immediately, but for best results – let the mixture cool or freeze it for 30 minutes. Or else the dough may be sticky.
  5. Divide the dough into 6 parts. Form a long log with each piece by rolling with your hands. Then press the ends together to make a bagel shape on the lined baking sheet. You can also use a bagel/donut pan.
  6. Sprinkle “Everything but the bagel seasoning” over the bagels and gently press the crumbles into the dough. Bake for 12-14 minutes until the bagels are firm and golden.
  7. Serve fresh from the oven, sliced in half, and spread with cream cheese. Yummy!

How to Store Low-Carb Bagels

These low barb bagels recipe is best enjoyed warm and fresh. However, if you have any leftovers, freeze them immediately as soon as they’re cool. That’s because they tend to lose their fluffiness and deflate when stored in the fridge. If you’re freezing them, make sure to slice them ahead of time. Then, to reheat them, place them in the toaster or air fryer for 1 minute.

How to Serve Fathead Bagels Recipe

There are many ways to enjoy these puffy, fluffy bagels, with the most usual being buns and sandwiches. First, slice the bagel and toast it. Then, add cooked eggs, bacon, sausage, or ham; optionally, spinach, tomato, or avocado. And voilà! Variations for the Keto Bagels Recipe

1. If you have a nut allergy, you can substitute the almond flour for gluten-free baking flour, sunflower seed flour (meal), or CarbQuick baking mix. I’ve also seen recipes for baking the bagels with protein powder.

2. To season the bagels, you can try a mix of garlic powder and onion powder. Add ¼ teaspoon of each into the almond flour before mixing it with the rest of the ingredients.

3. For the topping, you can use poppy seeds, coarse salt, or sesame seeds instead of the “Everything but the bagel” seasoning.

4. If you have a sweet tooth, we also have a variation for you. Add a granulated sweetener equal to ¼ cup of sugar and ½ teaspoon of ground cinnamon into the almond flour. Mix them before adding them to the rest of the mixture.

Ingredients

  • 1 and ½ cups shredded mozzarella
  • 3 TBS cream cheese
  • 1 egg
  • 1 cup Almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon of combined spices: dried oregano, basil, garlic powder
  • For topping:
  • Everything but the bagel seasoning or seasoning of your choice

Instructions

Notes

Recipe notes:

1. Leftovers (if any left) can be refrigerated for up to a week

2. Leftovers can be frozen as well - if freezing leftovers, slice bagel ahead of time. Place in toaster and toast for 1 minute.

3. If you have a nut allergy, you can substitute for Gluten-free baking flour instead or Sunflower seed flour (meal) or CarbQuick baking mix

3a. I have also seen other people have baked these with protein powder, instead of Almond flour.

4. If you don't have a microwave, melting ingredients on stove top will work too.

5. Try these bagels as bun or sandwich option - works amazing!

      HI Krista, I was able to test the recipe with vegan mozzarella cheese made by Daya. Yes, you can also sub the cream cheese for vegan version and follow the rest of instructions. You should be fine. Please let me know if success....Good luck

    I’m not sure how you came up with your macros. When I plugged the ingredients into my recipe calculator, I came up with 233 calories, 8.3 total carbs, 6.9 net carbs, 15.9 grams of fat and 13 gram of protein per bagel (1 recipe making 6 bagels). I look forward to splurging though! 🙂

        Hi Irina, I used the recipe calculator in the carb manager app
        Irina, I just tried your calculator and came up with the same information as you did. I don’t understand why there is such a huge discrepancy between the two calculators. I scanned my ingredients into carb manager, so I thought it was pretty accurate. Well, my bagels came out great. I made it into a batch of 8 instead of 6 to lower the net carbs a little.

          Yes, I recalculated again, but came to a similar nutrition, just slightly more because I used 2 cups of Mozzarella, instead of one and half.
          I have not used the carb manager, but will try another calculator by spark people , so we can compare. I will let you know what it says for accuracy, but after having a bagel I feel it's still pretty light and not worth 233 cal as from carb manager, what did you think?

            The problem is you are getting the wrong calories for the almond flour. A cup of almond flour has 680 calories!

    The nutrition information on this is very wrong! You should really double check your recipe before posting this. If you follow your recipe the actual nutrition information would be as follows:

    To those wondering about the macros and nutrition for this recipe... a lot of the ingredients can have varying macros and carb counts. Mozzarella cheese, depending on the fat/milk content. Almond flour depending on if it is blanched and/or organic or not, will have different carb counts. Cream cheese depending on the fat content and especially the brand can fluctuate greatly in carb counts. Even a single egg, same size, different brand, can be as far as 4 carbs different! Please take this into consideration and understand that the recipe, overall, is very low carb and probably an excellent substitute to an ordinary Everything Bagel. Look closely at nutrition labels before you call out the blogger for how wrong she might have been. I really do appreciate your post and look forward to making your version of these bagels!

    So good! But....I wish I would've read the comments first. Once I entered the amazing little babies into my food app, I was very disappointed how off the nutritional info is. 234 calories when i'm expecting 75 was upsetting, not to mention the carb count. I'll still be making these but with a bit more caution.

      Seems like food apps have some discrepancies... few readers already provided different information. The carb content should be accurate. I calculated it via multiple sources and manually... I'm going to recalculate calories, but should not be more than 200

    Ok I think I messed up some where... i used gluten flour mix so I think baking power was already in the mix.. i had this in a jar so i was not sure if it was a complet baking mix or just flour....welll now i know?. I came out with bagel cookie rings not at all what I had wanted...sooo I will try agaiN...THIS time i will use the almond flour.

    Omg! These were SO GOOD! I made a double batch and am so glad I did. They are perfect for that “missing the bread” feeling. Even my 12-yr old daughter liked them. And this is a girl that eats the Thomas’ cinnamon swirl bagels ALL the time. Which I may try the cinnamon added to them with a sweetener for that taste! Thank so much for the recipe! I tried the ones with just eggs and cheese, which I like, however, they don’t have the bread like texture that these have. Will definitely be making these again, they are pretty easy.

    Best low carb bagel recipe ever! I have tried several different recipes that are fair to awful. I only had 1 cup of mozzarella so added 1/2 cup of jack cheese. Sprinkled "Everything But the Bagel"seasoning on them, froze the dough for about 15 minutes because I'm impatient, and used a silicone bagel pan. Easy peasey, and really excellent, even by itself. Thanks!.

    My nutritional info was significantly different than yours. I had to split my bagels into 8 parts just to keep it reasonable. Even so, each bagel ended up being 366 cals and having over 12g of carbs. I used cheddar instead of mozzarella but that shouldn’t make such a big difference. Not sure what happened but these are not as low carb as I’d been hoping.

    I made these this morning! Soo yummy! I topped the bagel with an over easy egg and slice of bacon for a delicious breakfast sandwich! I’m sure your calculations are quite accurate on the carb count, as per the comments I saw you checked and rechecked your calculations several times. I really appreciate your attention to detail! However I know that calories/carbs can vary quite a bit depending on what ingredients I use. So ultimately it is my responsibility to know/count the carbs and calories I am consuming.     Very easy - good for beginners . One tip is to put the everything bagel seasoning in the bowl after all the bagels are formed. Press one side of the bagel in seasoning until you have the amount you want. Flip to have season side up and put on baking sheet. It reduces the excess seasoning from burning in the pan ?

    I love this recipe and make it often. I add a little salt to the dough and do not do the toppings. To me it is a,cross between bagel and English muffin. I roll mone out with small hole in middle and actually these often cook more as a,flat circle I like toasted with cream cheese or jelly and butter or for a small sandwich

    Hello Irena, I know a lot of people back in 2918 made comments or asked for clarification on the nutrition facts.

    I am confused because at the foot of the recipe you show the Carbs at 1.8g and yet in the one you show from Spark, it comes up to 4.6g, which to me sounds reasonable, I can't understand where the 1.8g comes from. Can you clarify this for me please.
