The moment I saw this Viral Chocolate Banana Bark on TikTok I knew it was my kind of recipe. Everyone loves the addictive combination of peanut butter and chocolate anything and my kids are obsessed with chocolate bark so I had to try it!

Like many viral recipes, there is a reason this banana bark has become popular. It’s so easy to make! All you need to do is arrange some banana slices on a lined baking sheet, cover them in creamy peanut butter, freeze them, and then layer on the melted chocolate. Add a sprinkle of flaky sea salt for extra sweet and salty goodness, and freeze to set. Then break it up and enjoy! How easy is that?

  • Bananas – semi-ripe medium-sized bananas.
  • Creamy peanut butter – drippy creamy peanut butter that will spread easily. You can use any kind of nut butter, just make sure it is drippy and spreadable.
  • Dark chocolate – I used dark chocolate chips (60% cacao) but any chocolate chips will work! You could also use chocolate bars. Use vegan chocolate chips for a vegan version.
  • Flaky sea salt – optional for topping – but highly recommend.
  • Coconut oil or butter – optional but recommended to add to the chocolate so when it melts it becomes shiny and easy to pour and spread.

How To Make Chocolate Banana Bark

You can make this banana bark with chocolate and peanut butter in minutes. It does take some time to set but is worth the wait! Here is a summary of how to make it.

Peel and slice the bananas. I like to peel them thinner but not too thin (about ⅓ inch thick). I slice them on a slight bias cut so they fit better together on the cookie sheet.

Arrange the banana slices in rows on the baking sheet, ensuring they are touching. I usually get about 6-7 across and 6-7 up and down. Like a rectangle shape.

Spread the peanut butter evenly over the bananas. I like to use a small rubber spatula or spoon to do this. Then place the bark in the freezer for 20 minutes to set.

Place the chocolate chips with coconut oil (if using) in a microwave-safe bowl and heat in the microwave in 30-second intervals until it is mostly melted. Stir (temper) to fully melt.

Spread the melted chocolate over the peanut butter and bananas in an even layer so it fully covers the peanut butter. Sprinkle it with some sea salt, if desired.

Expert Tips

  1. Use semi-ripe bananas – you want the bananas to be yellow with no green noticeable on the peel but not too much brown, because you want them to be sweet and flavorful but not too mushy. See my ingredients photo for an example.
  2. Cut the bananas into even slices at a slight angle. This made them more uniform in size and easier to line up on the baking sheet.
  3. Make sure the banana slices are touching when you line them up so they stay together once frozen. The peanut butter and chocolate layer will also help them stick together and not fall apart.
  4. Use drippy, creamy peanut butter. This is so important so that it spreads more easily over the bananas and sets up faster.
  5. Let the bark chill for at least 90 minutes. Once the banana bark is fully assembled, it is important to let it set up in the freezer for at least 90 minutes so the bananas get nice and firm and the peanut butter and chocolate set up well so when you break it up it all holds together nicely. Of course, you can chill it for longer than 90 minutes but I found that 90 minutes was the perfect amount of time.

Variations

Like any chocolate bark recipe, you can easily customize it by adding more toppings to switch it up. Here are a few ideas.

  • Reese’s – add some chopped peanut butter cups as a fun topping.
  • Pretzel bark – my kids love chopped pretzels added for extra crunch.
  • Snickers bark – add chopped peanutsand a drizzle of caramel for that Snickers taste and texture.
  • M&M bark – add some mini M&M’s for a fun twist the kids will love!
  • Almond joy – add in some shredded coconut and chopped almonds. My personal favorite!

Ingredients

  • 2 medium semi-ripe bananas
  • ½ cup + 2 tablespoons drippy, creamy peanut butter
  • 1.5 cups dark chocolate chips
  • 1 teaspoon coconut oil – optional
  • Flaky sea salt – optional

Instructions

  1. Line a medium-sized baking sheet with parchment paper.
  2. Peel and slice the bananas into ⅓-inch thick slices. I sliced mine on a slight angle so they fit together better. You want the banana slices to be as even in size as possible.
  3. Arrange the banana slices in a rectangular shape on the lined baking sheet. Make sure they are touching so they hold together better when you freeze them. See the photos in the post for an example.
  4. Spread the peanut butter evenly over the bananas to cover them completely. Use a rubber spatula to make the peanut butter easier to spread. If it is too thick then place the peanut butter in a microwave-safe dish in the microwave and heat it for 10-15 seconds to melt a little. Then place the bark into the freezer for 20 minutes to set.
  5. After 20 minutes, add the chocolate to a microwave-safe dish and heat it in 30-second intervals in the microwave until mostly melted, then stir it to fully melt. Watch it closely so it does not burn. Remove the bark from the freezer, and pour and spread the melted chocolate over it in an even layer. Sprinkle it with sea salt, if desired (this is also the point where you would add more toppings).
  6. Place the bark back into the freezer for at least 90 minutes, up to 2 hours to fully set.
  7. Once the banana bark is ready, remove it from the freezer, flip it over, and peel the parchment paper off of it, then break if up into large pieces.
  8. Serve and enjoy!

Notes

  • Use semi-ripe bananas but make sure they are not too ripe so they are not mushy.
  • Cut the bananas into ⅓-inch thick slices. You do not want them to be too thick or too thin so they can hold the peanut butter and chocolate layers well.
  • Freeze the bark long enough for the bananas to freeze and the chocolate and peanut butter to set. I found that 90 minutes was the ideal length of time.
