Snickerdoodle Apple Pie Bites are made with a snickerdoodle cookie cup made with a mix. Once the cookie cups are baked, they are filled with apple pie filling. You can even drizzle a little bit of caramel on top if you’re feeling fancy!

WHEN TO SERVE APPLE PIE BITES
Summertime and holidays are the perfect time for Apple Pie, andI found a way to make this traditional treat easier and yummier too! Instead of making a traditional pie crust, I used a Snickerdoodle Cookie Mix as the basewhich is perfect for Apple Pie because of all of the cinnamon flavor involved. I actually think it’s way tastier than regular pie crust. And Apple Pie is always a good idea. I’ve made these little treats for Thanksgiving and I’ve made them for the 4th of July and they work perfectly for both occasions (and everything in between). I have taken these little treats to lots of parties and everyone always wants the recipe – they are always a big hit!

- This dessert is so easy to make! The cookie cups are made with a snickerdoodle cookie mix – you just add butter and an egg! Use a small cookie scoop to place the dough in a mini muffin tin, bake and then fill each cup with a scoop of apple pie filling. Done!

Ingredients in Snickerdoodle Apple Pie Bites
Snickerdoodle Cookie Mix – You will need a 17-18 ounce package of Snickerdoodle Cookie mix. Cookie mixes are found in the baking aisle near the cake mixes and brownie mixes.
Butter – Nearly every cookie mix calls for one stick (1/2 cup) of butter. Follow the package directions – usually the butter needs to be softened before adding to the mix.
Egg – Most of the cookie mixes call for an egg, but follow whatever the mix requires.
Apple pie filling – You will need a 21 ounce can of apple pie filling. If you don’t love apple pie, go ahead and use peach pie filling or raspberry pie filling or whatever kind you want!
Caramel ice cream topping – This is completely optional, but there really isn’t a downside to adding caramel to anything. The apple pies are great with or without it!
How to make Snickerdoodle Apple Pie Cookie Cups
Heat oven to 375º F. Prepare a mini muffin pan by spraying thoroughly with cooking spray.
Stir together egg, butter and cookie mix until dough forms, hand kneading if necessary.Pour the cinnamon/sugar mixture from the cookie mix into a small bowl.
Using a tablespoon cookie scoop, scoop out the dough into 24 balls. Roll each ball in the cinnamon/sugar mixture and then place each ball into the prepared mini muffin pan.
Bake for 10-12 minutes or until the edges turn slightly golden brown. Immediately after removing from the oven, make an indention in the top of each cookie by pressing the back of a tablespoon into each cookie cup. (If a tablespoon seems too big, try a 1/2 or 3/4 tablespoon size.)
After cooling for 3-5 minutes, use a knife to gently pop out each cookie cup and then place on a wire rack to cool.
Prepare apple pie filling by chopping up the apples in the filling into small pieces. Use a tablespoon sized cookie scoop to scoop the pie filling into each of the cookie cups. If desired, sprinkle some of the remaining cinnamon/sugar mixture on the top of the pie filling and top with a drizzle of caramel ice cream topping.

WHAT TO SERVE WITH MINI APPLE PIES
These little apple pie bites are fantastic on their own, but if you want to dress them up a little bit, you can squirt a bit of whipped cream on the top or serve them with ice cream. Who eats apple pie without a scoop of vanilla ice cream? No one I know!
DO YOU NEED TO BAKE THE APPLE PIE FILLING?
Store-bought apple pie filling is already baked, as is homemade apple pie filling so you do not need to bake the filling after adding it to the baked cookie cup crusts. A lot of readers have asked about this! You can definitely heat the apple pie filling up if you prefer to warm it up before serving, but it is completely cooked as is. I can’t be the only one that eats pie filling straight out of the can?!? Or am I?
HOW DO YOU STORE MINI APPLE PIES?
These mini apple pies can be stored at room temperature for 2-3 days. I would wait to add the filling until right before serving just to keep the crust as fresh as possible, but you can store any leftover cookie cups at room temperature, no refrigeration necessary.
CAN YOU FREEZE SNICKERDOODLE APPLE PIE COOKIE CUPS?
Yes, you can freeze the cookie cups after baking them but wait to add the apple pie filling until after you have thawed them. You can freeze apple pie filling as well, so if you have some in the freezer, just thaw that and bring to room temperature and then add the apple pie filling to the cookie cups.
I serve these “mini apple pies” at room temperature, but you can definitely heat up the filling and add to the cookie cups right before serving if you prefer them warm. If you do want to serve them warm, place the cookie cups in the oven on warm (about 170°) for about 10-15 minutes while heating the apple pie filling.
